Preparation

The main component of the dish is tortilla. You can buy ready-made cakes in the supermarket or make them yourself using our recipe. Lavash is not suitable in this case: it is rather thin, does not tolerate freezing well and cracks easily during storage.

Scrambled eggs will be one of the fillers. To prepare it, beat the eggs with a pinch of salt and milk.

Pour the mixture into a preheated skillet with vegetable oil. Wait for the edges of the omelet to grab and begin to stir gently. You should get a mass of approximately the following consistency:

Brush the base with grain mustard, if desired, and place eggs, cheese and ham slices on top. Gently fold the edges of the flatbread towards the center, overlapping them. This unusual folding technique will allow you to close the components of the filling, protecting them during freezing, and also gives an original look to the dish.

If you decide to freeze the quesadillas, wrap each with a layer of parchment and foil and send it to the freezer. If not, start cooking. Place each tortilla, seam side down, in an oiled and preheated skillet. As soon as the quesadillas are browned on one side, turn over and wait for a golden crust on the other.
