If, after a few weeks of eating fresh tangerines, you're looking for variety, try some flavorful seasonal baked goods - simple fluffy muffins with tangerine zest and sweet and sour citrus syrup.
Ingredients
For cupcakes:
- 125 g soft butter;
- 130 g sugar;
- 3 eggs;
- zest of two tangerines;
- 120 g flour;
- 80 ml of kefir or yogurt;
- 1 teaspoon baking powder.
For syrup:
- 100 g sugar;
- 60 ml lemon juice;
- 60 ml of mandarin juice.
Preparation
If you've made muffins before, then you probably know how to knead the dough.
Leave the oil at room temperature to soften before cooking. Then beat it with a whisk or spatula until it turns white.
Continue beating, gradually adding eggs, one at a time, until thoroughly mixed. Stir in the flour and baking powder mixture, add yogurt and zest.
Divide the dough into the muffin tins, grease them with oil or lining them with paper base.
Bake in an oven preheated to 180 degrees for 12-15 minutes. Leave the finished muffins to cool for easy removal from the molds.
In the meantime, tackle the syrup. Mix all the ingredients from the list together and leave the mixture on the fire until the sugar is completely dissolved.
Remove the muffins, turn them over, and pour over the hot syrup immediately. Due to the high temperature of the mixture, it will easily saturate the crumb, make the baked goods juicy and give a bright citrus taste.
If desired, the muffins can be garnished with zest or tangerine slices peeled from the films.
