Mandarin Chutney

The onset of cold weather does not mean the end of the preparation of various preparations, and chutney is a direct confirmation of this. A jar of such a seasoning will serve any meat eater, as it goes well with beef, pork and poultry dishes.

Ingredients:

  • 2 tangerines;
  • 1 lemon;
  • ⅔ cup (160 ml) wine vinegar
  • 1 onion;
  • 2 cloves of garlic;
  • a handful of dates;
  • 2 cm of ginger root;
  • ½ teaspoon ground coriander;
  • ½ teaspoon chili flakes
  • ½ teaspoon of mustard seeds;
  • 1 teaspoon salt
  • 2-3 laurel leaves.

Preparation

Rub the citrus zest. Separate the tangerine and lemon wedges from the rind, being careful to get rid of the white flesh entirely, as it can taste bitter in the finished seasoning.

Finely chop the onion and date pulp. Pass the garlic through a press, and grate the ginger. Put all prepared ingredients in a saucepan along with spices, add vinegar and sugar and put on low heat.

Chutney should be boiled for a long time, until all the ingredients are boiled to a puree consistency, in our case it will take 40 minutes.

Then transfer the chutney to a small jar, cover it with a lid (but do not twist it!) And put it to sterilize in a water bath for 10 minutes.

Screw the lid back on tightly and refrigerate the jars before storing them in the refrigerator. Let the chutney sit for a month.

Hot tangerine lemonade

The honorable second place in the list of drinks that help warm up is taken by mulled wine (in the first place, of course, tea). We offer an alternative in the form of a mixture of hot citrus juice with spices, honey and alcohol. The latter, of course, is added at will.

  • 1 lemon;

  • 2 star anise;
  • honey to taste;
  • 400 ml of water;

Squeeze the maximum juice out of all citrus fruits, avoiding pulp and seeds. Mix the juice with water and spices, then place over medium heat and cook for 5 minutes after boiling.

Tangerines in chocolate

The last recipe is absurdly simple, but surprisingly tasty. It will fit as a delicacy in times when it is impossible, but really want to, or as a quick and cute addition to a glass of vermouth, wine or champagne.
