Chocolate muffins with filling

Ingredients:

  • 1 ¾ cup flour
  • 1 cup of cocoa (1 pack);
  • 1 cup sugar
  • 1 teaspoon salt
  • ¼ teaspoon of baking soda;
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla sugar or a pinch of vanillin
  • 3 eggs;
  • 1 cup milk
  • 1 bar of dark chocolate;
  • jam of your choice;
  • condensed milk;
  • coconut flakes;
  • ½ cup butter, melted.

Preparation

In a bowl, combine all dry ingredients. Try to make sure that the cocoa mixes well with the flour.

In another bowl, beat eggs with sugar, add melted butter and beat well again. Then add milk to the mixture and stir.

Then very gently pour the egg and milk mixture into the flour and cocoa and start stirring. This can be done either with a mixer or simply with a whisk.

Preheat the oven to 200 ° C, grease the muffin tins with butter, distribute the dough so that it takes about ⅔ the volume, and put it in the oven for 30-40 minutes.

Take the finished muffins out of the molds and let them cool, and in the meantime, melt the dark chocolate in a water bath, adding a little butter (two tablespoons per one plate). Then you make the filling for the muffins. I chose cherry jam and condensed milk mixed with coconut flakes (it should be almost like plasticine in density, that is, more coconut flakes).

In the tops of the cupcakes, cut out the funnels so that at least 7 mm of the cupcake remains along the edges, and in the depth it takes up about ¼ of the entire cake. Put jam, jam or a mixture of condensed milk with coconut into these funnels and send them to the refrigerator so that the filling freezes a little. Then spread a layer of chocolate on top of the stuffed cake and put it back in the refrigerator for about half an hour so that the chocolate hardens.

Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 4 eggs;
  • 2 teaspoons of vanilla extract or a pinch of vanillin

  • 2 teaspoons baking powder
  • 1 teaspoon of finely ground coffee (optional);
  • ½ teaspoon salt;
  • 1 cup powdered sugar

In a separate bowl, first mix cocoa with sugar, and then add vegetable oil there, constantly whisking the mixture with a whisk or mixer until the mass becomes shiny and smooth. Then start hammering eggs into this mixture, one at a time, beating after each for at least 30 seconds.

In another bowl, combine flour, salt, baking powder, vanillin, and coffee. Then add the chocolate-butter mixture there and mix everything well again until smooth. You should have a thick and slightly sticky dough. Wrap it in plastic wrap and put it in the refrigerator for at least four hours, or you can overnight.

Preheat the oven to 180 ° C and line the baking sheet with baking parchment. Pour icing sugar into a small bowl. Take the dough out of the refrigerator and make small balls with a diameter of 2.5 cm out of it, roll them in powdered sugar and send them to a baking sheet. Bake for 10 minutes.

You do not need to press the balls or make cakes from them, since under the influence of temperature they themselves will spread a little and crack. In the recipe, the indicated amount of sugar is 1 ½ cups, but I think that one cup will be enough, since the icing sugar makes the cookies quite sweet.

This recipe is still one of the most beloved, since fresh cookies turn out to be very tasty and a little stringy, and milk powder gives its taste a creamy shade.

Ingredients:

  • 1 cup of butter at room temperature
  • 1 cup brown sugar
  • ½ cup regular sugar
  • 2 eggs;
  • 2 teaspoons of vanilla extract or ½ teaspoon of vanillin;
  • 1/2 cup cocoa
  • ¾ cups of milk powder or dry cream;
  • 2 ½ cups flour;
  • 2 teaspoons of baking soda
  • 1 teaspoon salt
  • 2 cups of chocolate chips.

Preparation

Whisk butter and sugar (both) until fluffy. Then add eggs and vanilla extract there and beat again.

In a separate bowl, mix flour, cocoa, salt, soda and milk powder, then stir in the butter and sugar mass. The last step is to add the chocolate chips and mix well again. Put the dough in the refrigerator for an hour or overnight.

Preheat the oven to 170 ° C, cover the baking sheet with parchment for baking, make small balls of dough with a diameter of 2–2.5 cm, press lightly and place on the prepared surface. Send them to the oven for 10 minutes, then take out the finished cookies, let them stand and cool for a while, and only then carefully transfer them to a separate bowl.

I made these cookies without the addition of chocolate chips and it still tastes great!
