For a healthier, low-calorie alternative to a crunchy yeast dough base, we suggest using a base that is almost entirely cauliflower. It will turn out delicious, we promise.

First of all, divide the cabbage into large inflorescences and grate them on a coarse grater up to the stem. At the exit, you should get about four glasses of cabbage "rice" - an excellent dietary side dish, which can be boiled with soy sauce and eaten separately. We will also have to cook it, but for other purposes.

Cooking "rice" from cauliflower should be in salted boiling water for no more than 5 minutes. Then it is thrown into a colander, cooled and with the help of gauze squeeze out as much excess liquid as possible.

Mix the remaining cake with sour cream and cheese (low in fat), chicken egg, dried Provencal herbs and a garlic clove. If you are not sure that you have carefully squeezed out all the excess moisture from the cabbage, then add a tablespoon of whole grain flour to the mixture to play it safe.

We spread the cabbage "dough" on oiled parchment or a silicone mat, with our hands mold something that looks like a pizza base and put it in the oven for half an hour at 200 degrees. Cover the browned cabbage base with sauce, cheese, any preferred additions. Put the pizza back in the oven to melt the cheese, then remove and slice.

Ingredients:

  • large head of cauliflower;
  • 1 egg;
  • 1/4 cup low-fat grated cheese
  • 1/4 cup low-fat sour cream;
  • garlic clove;
  • 1/4 teaspoon of a mixture of dried Italian herbs
  • tomato sauce, cheese, any toppings of your choice.

Preparation

  1. Rub the cabbage inflorescences on a coarse grater and cook in salted boiling water for 5 minutes. We discard the cabbage in a colander, cool and squeeze out as much liquid as possible, transferring the grated inflorescences into a gauze bag.
  2. Mix cabbage cake with egg, sour cream, cheese, garlic and herbs. We form the mixture into a layer 0, 4–0, 5 cm thick on a sheet of parchment or a silicone mat. We bake the pizza base for half an hour at 200 degrees.
  3. Cover the base with sauce, cheese and any toppings of your choice. Return the pizza to the oven to melt the cheese.
