For all those who are not afraid of fiddling with flour and yeast, a simple recipe for a universal bun dough that works for hot dogs and hamburgers. A great addition to a summer barbecue and another reason to remind yourself how much homemade bread tastes better than purchased bread.

For cooking we need:

Thoroughly sifting flour, combine it with yeast, sugar and salt.

Add warm (38–40 degrees) water or milk to the dry ingredients, then send beaten eggs, honey, butter at room temperature and grated boiled potatoes. The latter should not be hot, otherwise the high temperature can negatively affect the activity of the yeast.

Stir all the ingredients together for a couple of minutes. The finished dough is sticky and soft.

We take a container of greater depth or diameter, grease its bottom and walls with vegetable oil, and then place the potato dough in it.

Cover the dishes with cling film and leave them warm for 2 hours or until they double in size. The end result is something like this.

Now we divide the dough into portions. The size of the latter is limited only by your desire, but we recommend stopping at the golden mean: for a burger it is 140 grams, and for a hot dog - 120 grams (length is about 10 centimeters). We shape the buns, lay them out on a baking sheet covered with parchment, leave for another hour and let them come up a second time.

Lubricate the buns with whipped egg yolk and put in an oven preheated to 180 degrees for 12 minutes.

Then we grease them with melted butter and return to the oven for a similar time. Then another scoop of butter for the buns, and you're done!

  • flour - 6 tbsp. (750 g);
  • sugar - ½ tbsp. (100 g);
  • salt - 1 tbsp. l.;
  • dry yeast - 1 ½ tsp. (4 g);
  • warm water - 1 ⅓ tbsp. (320 ml);
  • honey - 60 ml;
  • boiled potatoes (finely grated or pureed) - 1 tbsp.;
  • eggs - 2 pcs. (+ yolk for brushing);
  • butter - 113 g (+ for lubrication).

Preparation

  1. Sift flour and mix with yeast, sugar and salt.
  2. Pour warm water (38-40 degrees), a couple of beaten eggs, honey into the flour mixture, and then put potatoes and butter at room temperature.
  3. Knead the dough for 1-2 minutes, transfer to a greased bowl and leave to warm until it doubles in size (about 2 hours).
  4. Divide the matched dough into portions (120 and 140 grams for hot dogs and burgers, respectively) and shape. We leave the buns to come up a second time for another hour.
  5. Lubricate homemade buns with whipped yolk and put in an oven preheated to 180 degrees for 12 minutes. We take out the baking sheet, cover the buns with a layer of melted butter and set to bake for another 12 minutes. Additionally, grease the buns with oil after removing from the oven.
