To diversify even the most banal set of dishes on an outing, we take three universal sauces that can not only accompany a kebab, kebab or burger, but also serve as an excellent dip for bread and chips, complement fish dishes and vegetables baked on charcoal.

Barbecue sauce

If you are a big fan of barbecue sauces, then try replacing the purchased version with your own one. Sweetish-spicy, with a slight sourness, it has no analogues on store shelves, it is prepared quickly and from available ingredients, and the amount obtained is more than enough for a couple of picnics ahead.

The cooking scheme is simple, like all subsequent sauces. In a saucepan, mix sugar with ketchup, Worcestershire sauce and mustard, fill everything with a mixture of apple and orange juice, add a couple of drops of Tabasco. It doesn't look very attractive yet, but wait.

Put the sauce over medium heat and cook, stirring occasionally, for 20-25 minutes, until thick enough to cover the spoon. Cool the prepared sauce, pour it into cans or bottles and use it as an addition to any meat dishes (kebabs, kebabs, burgers, hot dogs …) or for glazing ribs and chicken.

Tsatziki (dzatziki)

The second sauce - tzatziki (dzatziki) - is even simpler: take a can of Greek yogurt and mix it with dill, lemon zest and a pinch of salt, at the end add the grated and squeezed cucumber from excess moisture.

There is no better dip for bread and baked vegetables. In addition, tzatziki is a classic addition to meat (especially lamb) and fish dishes.

Chimichurri

Chimichurri Latin American sauce is another perfect accompaniment to grilled meat. It can be served with ready-made meals or used as a marinade.

The chimichurri will take 5 seconds if you have a blender. Put the herbs with garlic and fresh chili into the bowl, add all the liquid ingredients and beat until smooth. If there is no blender, then herbs and garlic with pepper can be chopped by hand.

Barbecue sauce

Ingredients:

  • sugar - 160 g;
  • juice of 2 oranges;
  • apple juice - 200 ml;
  • mustard (sweet) - 30 g;
  • Worcestershire sauce - 60 ml;
  • ketchup - 200 g;
  • Tabasco to taste.

Preparation

Mix all the ingredients in a saucepan and cook over medium heat for 20-25 minutes or until thickened.

Tsatziki (dzatziki)

Ingredients:

  • Greek yogurt - 200 g;
  • large cucumber - 1 pc.;
  • a bunch of dill;
  • zest of half a lemon.

Preparation

  1. Rub the cucumber on a fine grater and squeeze.
  2. Mix yogurt with cucumber, chopped dill and zest. Add salt.

Chimichurri

Ingredients:

  • garlic - 2 cloves;
  • chili pepper - to taste;
  • mint and parsley greens - 1 tbsp each;
  • red wine vinegar - 30 ml;
  • olive oil - 90 ml.

Preparation

Beat all the ingredients with a blender until smooth, or chop the herbs with garlic by hand and combine with oil and vinegar.
