It's autumn, and the weather hasn't been summer for a long time. The rainy and cold season is beginning, so I decided to start making a selection of delicious recipes that can also be good for your health and mood.

Let's start with the chili peppers, then the ginger!

Why chili peppers? Because it is useful, helps to fight colds and cheers up! Chili peppers are rich in vitamins A and C (namely, red peppers, since green peppers have much less of these vitamins), B vitamins (especially B6), as well as potassium, magnesium and iron. They also improve metabolism, the condition of the cardiovascular and digestive systems.

However, it also has contraindications: chili peppers are not recommended for allergy sufferers and people who have diseases of the gastrointestinal tract (especially for ulcers). So be careful when choosing your meals!

Chili Pepper Jam

This is the simplest recipe I have found with the least soiled dishes. It is very difficult to spoil it.;)

Ingredients:

  • chili pepper - 150 g;
  • sweet bell pepper - 150 g;
  • sugar - 1 kg;
  • apple cider vinegar - 600 ml.

Preparation

Seed both peppers, cut into small pieces, and grind in a food processor. Pour 600 ml of apple cider vinegar into a small enamel pot and add all the sugar. Bring to a boil and add the pepper mixture. When the jam boils a second time, reduce heat and simmer for 40-50 minutes. The consistency should be similar to that of raspberry jam. In principle, you can cook for longer or add a little gelatin to thicken the jam faster.

As a result, you should get about 1.5 liters of delicious and spicy jam. It goes well with soft unsalted cheeses (pictured - Adyghe cheese) and cold meat.

Thai Sweet Chili Sauce

A bottle of our beloved spicy-sweet Thai sauce, which goes so well with grilled chicken, spring rolls and shrimp in batter, is quite expensive and consumed very quickly. Therefore, it was decided to finally use the Bangkok street food book of Thai recipes for its intended purpose.

The sauce is prepared very quickly, and the cost of the ingredients is several times less than the cost of the finished product, which is sold in stores.

Ingredients:

  • chili pepper (large) - 7 pcs.;
  • garlic - 2 cloves;
  • vinegar - 12 tbsp. l.;
  • sugar - 8 tbsp. l.;
  • salt - 1/2 tsp.

Preparation

The preparation method is the same as for jam. Peel the seeds from the pepper and cut into small pieces, and cut the garlic cloves into several pieces. Then you send it all into a food processor and grind it to a more or less uniform paste. In a small saucepan, combine the vinegar, sugar and salt and bring to a boil, then add the chili and garlic paste. Boil until syrupy.
