Ingredients:

  • 1 cup coconut milk
  • 2 teaspoons agar agar;
  • ⅓ teaspoon of salt;
  • a pinch of black salt;
  • ¾ teaspoon of vinegar;
  • ¼ a teaspoon of lemon juice;
  • 2½ tablespoons of starch.

Mozzarella has a special soft and elastic consistency, rich white color and delicate taste. The cheese will be based on coconut milk, which has all the necessary taste and appearance, as well as a fairly high fat content.

Black salt with a specific aroma, lemon juice, a little vinegar will add piquancy. Starch and agar-agar are responsible for the unique consistency in this recipe.

The last ingredient deserves special attention. Unlike its analogue - gelatin, it is made without animal products. It is a natural vegetable thickener used in desserts, jellies and even cheeses.

Preparation

The first step is to bring the coconut milk to a boil. As soon as the first bubbles appear, the temperature must be lowered slightly.

Agar-agar works only in a hot environment, therefore, the dry substance must be poured out immediately after boiling the milk and mixed very thoroughly. You can also dilute the thickener in a little hot water before mixing with milk to make it easier to combine the ingredients.

The starch is added last. At this point, the cheese will begin to thicken noticeably. You can use a blender or whisk to mix thoroughly.
