Today on Instagram I came across a photo of a mini zucchini pizza, and I immediately decided to test this option. In the end, it took just under 20 minutes to cook, and the zucchini pizza was delicious! So I am sharing with you a basic version that can be prepared by anyone who knows how to hold a knife in his hands and how the oven turns on;)

Ingredients: 1/2 zucchini, fresh / dry basil or Italian herb blend, 2 fresh tomatoes, 2 cloves of garlic, 50g Cheddar cheese, olive oil, salt and pepper to taste.

Cooking. I indicated the number of ingredients based on what I got, but it all depends on the size of the vegetables. Even if you take too many tomatoes, you can still eat them later, as ripe, aromatic and sweet tomatoes go well without additional ingredients.

So, you wash and dry the tomatoes, basil and zucchini. Cut the zucchini into slices 5-8 mm thick, coat with olive oil, salt and pepper a little and send to the oven or grill for literally 5-7 minutes, almost until cooked.

While the zucchini is baking, chop the tomatoes and basil very finely, mix them, add a little salt and pepper, squeeze out the garlic and add literally 1 tablespoon of olive oil. Mix all this well again. Then rub the cheese separately.

You take out the almost finished zucchini, turn the circles upside down, put the tomato mixture on top and cover it with grated cheese. Then again send it to the oven for literally 5 minutes, that is, until the cheese melts. At first, I thought of mixing grated cheese with tomato mixture, so that it would be more convenient to spread it on the zucchini, but then I decided not to risk it and try this option next time.

If you find cheese not very healthy, you can replace it with cottage cheese. Only in this case, you need to put it not on top of the tomatoes, but use it as a base, putting the filling on top.

The filling can also be different, as, in principle, the base. The basis is zucchini, eggplant, zucchini. Filling - tomatoes with basil, olives and cheese, mushrooms with cheese, sweet peppers with tomatoes and other delicious combinations.
