Pimenton gives the breading an amazing smoked flavor, but you can diversify the mixture with ordinary paprika, as well as any dried herbs and spices to taste, the main thing here is the lavash base itself, for the preparation of which pieces of pita bread or pita should be dried in the oven and crumbled by hand or using a blender … The crumb should not be too small, otherwise the very characteristic crunch will be lost.
The second breading, more familiar, is prepared on the basis of rusks with dried Provencal herbs, garlic and cheese. It is much less coarse and crunchy, easily absorbs moisture and becomes slightly viscous inside after baking, which, of course, also has its own charm.
The breading process is familiar to everyone: roll the vegetable sticks in flour, dip in an egg and sprinkle with breadcrumbs. It is most convenient to distribute all dry ingredients in bags and put zucchini in them in large portions. After shaking the bag, the breading flour will cover the pieces with an even layer, and you do not have to wash your hands for a long time.
It remains to put the future "fries" on a baking sheet covered with parchment and put in an oven preheated to 210 degrees for 18-20 minutes. In the middle of baking, turn the sticks over to the other side.
