We offer an alternative that combines the filling of the classic quiche with the base of one of the most popular potato dishes served for breakfast.

Ingredients:

  • 4 medium potatoes;
  • 35 g butter;
  • 3 eggs;
  • 1 cup (240 ml) cream
  • ½ cup (120 ml) milk
  • salt;
  • filling for quiche of your choice (vegetables, cheese, fish or meat).

Start by preparing the potato base. It differs from classic potato pancakes only by the presence of butter. Peel the tubers and grate them on a fine grater. Squeeze the grated potatoes well, try to dry the mass well with a napkin or towel, and then mix with butter.

Oil a 20 cm round pan and spread over the potato mass. Make sure that the layer is as uniform as possible both on the bottom and on the walls. After the potato crust is formed, send it to bake for half an hour in the oven at 230 ° C.

While the crust is baking, beat the base of the filling with the mixture of cream, eggs and milk. Don't forget about salt.

As for the rest of the fillers, everything here is determined only by your preferences. Vegetables, cheeses, fish and meat products will do. Spread the filling of your choice over the potato base and pour over the milk and egg mixture.

Return the dish to the oven, having previously cooled it to 180 degrees, and bake for half an hour.
