With the arrival of spring and warmth, the appetite for various sandwiches with vegetables also came. Therefore, I decided to look for delicious and fairly simple recipes. Moreover, after the May holidays, it's time to take a short break from eating meat;)

So, let's start with the simplest and most delicious - Caprese! And even if I have already posted this recipe, I will repeat it again.

Recipe number 1. Sandwich with mozzarella and tomatoes

Ingredients: tomatoes, bread, mozzarella, garlic, fresh or dry basil, olive oil, wine vinegar, and ground black pepper.

Cooking. You can cook it on fresh bread or lightly toasted bread. In the second case, you will need to sprinkle one side of the slice with a mixture of olive oil and chopped garlic and place this side on a preheated grill or skillet. Then you need to turn the bread toasted side up, put the tomatoes cut into rings on top, then a layer of mozzarella and wait until the cheese starts to melt a little. Transfer the sandwiches to a plate, add a little salt and pepper to taste, drizzle with olive oil and wine vinegar. The final touch is the addition of fresh basil on top.

You can do the same thing, but without toasting the bread. That is, you simply pour a mixture of oil and garlic on one side, put tomatoes and cheese on top, salt, pepper, a little wine vinegar and fresh herbs on top.

Recipe number 2. Grilled sandwiches with baked peppers and goat cheese

Ingredients: baked bell peppers, goat cheese, olive tapinade, bread, arugula (optional).

Cooking. Bake peppers, peel them from seeds and skins. Toast the bread lightly on the grill, skillet or toaster. Spread one slice with goat cheese, the other with tapinade. Put chopped baked peppers and arugula between them.

On the subject of cheese, if you don't like goat cheese, you can use any soft cheese. It will be expensive to buy ready-made olive tapinade, so you can simply grind the pitted olives together with olive oil and garlic in a blender (1 small clove of garlic per 100 g of olives) - you get a base mixture that will be just as tasty and much cheaper!

Recipe number 3. Sandwich with radish, tomatoes, feta and tzatziki

Ingredients: bread, radish, tomatoes, feta, lettuce, tzatziki or its replacement - a mixture of sour cream with finely chopped garlic, cucumber and herbs.

Cooking. Cut the radishes and tomatoes into thin rings, wash and dry the lettuce leaves, mix feta and tzatziki sauce together. Spread the slices of bread, each on one side, with a mixture of feta and sauce, put a leaf of lettuce on one slice of bread, add a little salt and pepper to the slices of radish and tomatoes, cover with the second slice of bread with the spread down on top.

Tzatziki is a traditional Greek sauce made with Greek yogurt, garlic and fresh cucumber
