Today we want to offer you a simple and delicious vegetable lasagna recipe. This dish is great for those who love Italian cuisine and at the same time want to lose weight. In addition, the season of zucchini, zucchini and eggplant is just starting now, and this option of cooking them will add a little variety to your summer menu.

The amount of vegetables depends on how much lasagna you want to cook. For example, lasagna in two layers in a 21 × 14 cm mold took me two small zucchini, two small eggplants, one can of tomatoes in their own juice (350 ml) and about 350 g of mushrooms.

This version of lasagna is good because instead of sheets of dough, albeit from durum wheat, vegetables are used. In my case, it was zucchini and eggplant, you can only use zucchini or zucchini. Or you can take zucchini, yellow zucchini and simple zucchini and make several layers of different colors!

How to cook: cut vegetables into thin strips (about 5 mm), salt and pepper, coat with vegetable oil (preferably olive oil) and either send them under the grill in the oven, or heat up a grill pan and cook on it.

A completely dietary option: send the vegetables to the oven under the grill, without greasing them with oil, but simply putting them on baking paper.

Filling

The filling can be very different! It all depends on your preferences or what is in the refrigerator. In my case, these were fried mushrooms (champignons and oyster mushrooms) with tomatoes, basil and garlic. A more satisfying option is stewed tomatoes with onions, carrots and cottage cheese. Yes, exactly with cottage cheese, as Italians like to add ricotta to many of their sauces.

Two more cottage cheese filling options: stewed spinach with garlic and cottage cheese, stewed eggplant with tomatoes and cottage cheese. In the second version, eggplants are stewed with tomatoes, ground with a blender, and cottage cheese is added to them during the grinding process. The ratio is approximately 3: 1 (vegetables to cottage cheese). And you can add walnuts to cottage cheese and spinach!

You can also make a vegetable mix that includes eggplant, zucchini or courgette trimmings, tomatoes, mushrooms, and bell peppers.

Layer: grilled vegetables, toppings, grilled vegetables and so on. The number of layers depends on the height of the lasagna mold. The top layer is vegetables. You can also add a little grated cream cheese to the filling and sprinkle the top vegetable layer with cheese.

Then send it all into the oven for literally 5 minutes at a temperature of 200 degrees, so that the lasagna warms up and the cheese begins to melt. Since all the ingredients are already ready, it makes no sense to keep it in the oven for a long time.
