I absolutely love the Green Kitchen Stories culinary blog with beautiful, delicious and healthy recipes. As the picnic season begins, I decided to try out recipes for vegetable bread made from broccoli, beets and carrots. Only four ingredients and a delicious and unusual result!
Broccoli bread
Ingredients:
- 1 head of broccoli;
- 100 g almond flour or ground almonds (can be substituted for walnuts);
- 4 eggs;
- 1 teaspoon of your choice of dried herbs (oregano, thyme, lemon pepper)
- salt and black pepper to taste.
Preparation
Preheat oven to 200 degrees. Cut broccoli into florets and chop in a blender (broccoli should look like rice). Measure out four cups of this mixture, add ground almonds, herbs, salt and pepper. Mix the mixture thoroughly with your hands, make a small depression in the middle and add eggs there (it is better to beat them with a fork beforehand).
Stir the dough until smooth. It will turn out to be slightly wetter than the standard one.
Place baking paper on a baking sheet, line the dough and spread evenly over the surface with your hands. Place in oven for 25 minutes or until bread is slightly golden brown. Turn the finished bread carefully and separate from the paper. Store in the refrigerator.
Beetroot bread
Ingredients:
- 1 small head of cauliflower
- 2 medium beets;
- 100 g almond flour or ground almonds (can be substituted for walnuts);
- 4 eggs;
- ½ teaspoon salt;
- black pepper to taste.
Preparation
Peel raw beets. Follow the same steps as for broccoli bread. The dough will turn out to be a little more moist, but during baking it will dry to the desired state.
Carrot bread
Ingredients:
- 1 small head of cauliflower
- 1 large carrot;
- 100 g almond flour or ground almonds (can be substituted for walnuts);
- 4 eggs;
- ½ teaspoon salt;
- black pepper to taste.
Preparation
Peel raw carrots. Follow the same steps as for broccoli bread.
