Ingredients
- 2½ sheets of gelatin;
- 200 ml of cold water;
- 8 passionfruit;

- 300 ml heavy cream (from 35% fat);
- 80 g sugar;
- 1 tablespoon caster sugar.
Preparation
Soak gelatin in cold water. Extract the pulp from four passionfruit fruits. Combine milk with cream, pour half into a saucepan and heat slightly over low heat.
Add the sugar along with the passionfruit pulp and continue cooking, stirring constantly. Do not bring to a boil. When sugar dissolves, remove from heat.
Squeeze out the gelatin and place it in the same saucepan. Stir until completely dissolved. Then strain the liquid through a sieve and mix with the remaining milk mixture. Pour into molds and refrigerate for 4-6 hours or longer.
Remove the pulp from the remaining fruit and mix with the powdered sugar. Rub through a sieve, and then mix with a tablespoon of seeds. Pour the resulting sauce over the dessert before serving.
3. Quick cheesecake with passionfruit
Ingredients
- 150 g gingerbread cookies;
- 40 g butter;
- 4 tablespoons of powdered sugar;
- 300 g cream cheese;
- 200 ml heavy cream (from 35% fat);
- 6 passion fruit.
Preparation
Grind the cookies in a blender or crush them with a rolling pin. Combine with melted butter and a tablespoon of powdered sugar. Put in a mold, flatten and press down with a spoon, then leave in the refrigerator for 15-20 minutes.
Whip the cheese with the cream, the remaining icing sugar and the pulp of five passionfruit. Spoon the mixture onto the cookie mass. Decorate the top with the pulp of the remaining fruit. Refrigerate until serving.
