Beer marinade
A small amount of foam will fit not only for washing down chicken kebabs, but also for pickling it. The safest base can be a regular lager, but fans of the rich caramel flavor must stock up on a separate bottle of stout specifically for the marinade.
Pour beer into a saucepan and set to simmer over high heat until the volume of liquid in the container is halved. A similar procedure is necessary to remove alcohol from the drink and concentrate its taste. Add orange juice, zest, apple cider vinegar, garlic passed through a press, as well as oil and salt with pepper to the rest of the beer.
In a beer marinade, a chicken can spend from 2 to 24 hours.
Hot and sweet marinade
A spicy-sweet Asian marinade is best used for marinating parts of a bird with skin: thighs, wings, drumsticks. After roasting or baking, the surface will be covered with an appetizing glossy glaze.
For this simple marinade, just mix soy sauce with orange juice, rice vinegar, honey, sesame oil, ginger and hot pepper.
After 20 minutes after immersion in the marinade, the chicken can be taken out and cooked. During cooking, it is recommended to grease the poultry with the remains of the mixture.
Yoghurt marinade
Yoghurt marinade makes any meat softer and juicier, and therefore is suitable for cooking not only poultry, but also lamb, for example.
Here everything is just as elementary simply mixed: Greek yogurt (or low-fat sour cream), chopped parsley, paprika, a little cayenne pepper, garlic and salt. Ready!
After mixing the marinade with chicken, leave it in the refrigerator for half an hour to a whole day.

Beer marinade
Ingredients:
- 1/2 glass of beer (120 ml);
- 1 teaspoon orange peel
- 1/4 cup orange juice (60 ml)
- 2 cloves of garlic;
- 2 tablespoons of apple cider vinegar (30 ml);
- 1/4 cup vegetable oil (60 ml)
- 1/2 teaspoon of salt, pepper.
Preparation
- Pour the beer into a saucepan, put it on the fire and wait until it is halved in volume.
- We mix the beer with the rest of the ingredients and marinate the poultry in the mixture for 2 to 24 hours.
Sweet Hot Soy Marinade
Ingredients:
- 1/2 cup (60 ml) soy sauce
- 1 teaspoon ground ginger
- juice of 1 orange;
- 2 tablespoons of rice vinegar (30 ml);
- 2 tablespoons of honey (30 ml);
- 1 teaspoon sesame oil
- hot pepper to taste.
Preparation
Mix all the ingredients together until smooth and marinate the chicken in the resulting mixture for 20 minutes. Leftover marinade can be used to glaze the poultry during cooking
Yoghurt marinade
Ingredients:
- 1/2 cup yogurt or sour cream (120 ml)
- 2 teaspoons of chopped garlic
- 1/4 cup chopped parsley
- 2 teaspoons ground paprika
- a pinch of cayenne pepper;
- salt to taste.
