We'll just call it a three-ingredient cake, because it doesn't require anything other than eggs, sugar and the nuts to make.

The first thing to do is turn the walnut kernels into flour. This can be done using a high-speed blender or a conventional meat grinder.

Next, separate the egg yolks from the whites and beat until white with sugar. If desired, the recipe can be supplemented with lemon zest for flavoring. It is added directly to the whipped yolks.

Whisk the whites separately into a strong foam.

Mix nut flour with yolks until a thick pasty mass is obtained. Add the egg whites whipped into the foam in portions, gently stirring all the ingredients to keep more air.

Spread out the dough in a greased and parchment-covered pan (ours is 20 cm in diameter), and then leave the cake to bake at 180 degrees for about an hour. As the nuts burn quickly, the cake may need to be covered with a sheet of foil for the last 10-15 minutes of cooking to keep the surface from darkening too much.

Let the finished cake cool completely - this is one of those desserts that get even better the next day.

Preparation

  5. Spread the mixture in the mold, grease it with oil and cover it with parchment. Bake at 180 degrees for one hour. Cool the finished cake completely before serving.
