The perfect breakfast pancakes, ruddy, soft, hot and fluffy, can be made without a prescription even before your first sip of morning coffee. It is enough to remember only the ratio 1: 1: 1: 1, put the pan on the fire and start working.
The same mysterious ratio 1: 1: 1: 1 is the ratio of the amount of flour, kefir, baking powder and eggs: one egg, a teaspoon of baking powder and a glass of kefir with flour. Pretty simple now, right? And it may be even easier if you prepare a dry base for pancakes for future use, then you just have to drive in an egg, pour in kefir, mix, and you can start frying.
If there is no ready-made dry base, then simply combine the flour with baking powder. Add there the selected sweetener to taste, we have simple white sugar, a couple of tablespoons of which will be enough to get sweetish, but not sugary pancakes.
At the same stage, you can add dry spices: cinnamon, nutmeg, ginger, cloves. You can also substitute some of the wheat flour with whole grain or rye flour.
Now to the liquids: beat the kefir with the egg. Optionally, you can add two tablespoons of melted butter or vegetable oil here. Rumor has it that this does not make the pancakes stick to the surface on which they are fried.
We combine the liquid and dry mixtures, knead the dough exactly until the mixtures are combined with each other, no longer, otherwise the pancakes will come out tough. The finished dough, ideally, should be kept in the refrigerator for another 20 minutes, but in the morning no one has time for this, and therefore we proceed to frying.
Pour a quarter cup of dough into a hot pan and wait for bubbles to form on the surface. After that, the pancakes can be immediately turned over and browned on the other side, or you can sprinkle with chocolate, put the banana pieces, pour a little more dough to cover the filling, and continue cooking over low heat so that the dough in the pancakes is completely baked.
An oven preheated to 90 degrees will help keep the pancakes warm before serving. The serving is at your discretion: honey, butter, cream, syrups, a little more chocolate, sour cream - whatever your heart desires.
