There is only one ingredient in the world that can brighten up any dish. This is cheese. Melted and stringy cheese. If you breathe to cheese as unevenly as we do, then you will not be surprised with a fondue recipe. Therefore, we decided to cook it without a recipe, because every self-respecting cheese lover should be able to cook this cheese bliss blindly, right?
All you need to make a fondue is cheese, some kind of alcohol, and any food you can dip into the fondue.
In addition to the cheese itself, there is another basic ingredient in the recipe - alcohol. In the classics, wine is used, but it can and should (in order to expand one's horizons) be replaced with alternatives, for example, beer. It turns out not trivial and no less tasty. Choose the type of beer to match the cheese, but so that it does not drown out the taste of the latter. Prefer light pilsner and ale.
If you still decide not to deviate from the classics and use wine, then buy Riesling - a win-win option.
Rub the sides of the fondue dish with a cut of garlic and pour in the alcohol of your choice.
While the liquid is heating, grate the cheese. You can take one or several types at once. Any fatty cheese that melts easily will do. You can choose simpler varieties like Swiss, Cheddar or Gouda, or you can add some creamy Camembert brie and spicy Roquefort to them - a matter of taste and budget.
Combine the grated cheese with a teaspoon of starch to thicken the fondue.
Now to what you are going to dip in cheese. Dried bread is a classic, but you can take pretzels, boiled potatoes, apples, sausage and even gherkins: do you remember that cheese can do anything better?
When the alcohol warms up, start tossing in the cheese handful by hand, stirring constantly. As soon as all the pieces of cheese have dispersed and the fondue starts to bubble, you're done. A little paprika, nutmeg, dried garlic, pepper flakes, hot sauce, or brandy are great.
Fondue forks, regular table forks or skewers can help make the process of eating less traumatic, saving you from the urge to dip your finger into the bubbling cheese.
