1. Simple liver pancakes
Ingredients
- 500 g pork liver;
- 1 egg;
- ground black pepper - to taste;
- 2-3 tablespoons of flour;
- 2 tablespoons of vegetable oil;
- salt to taste.
Preparation
Cut the liver into large pieces and grind with a blender along with the egg. Pepper. Add flour and stir to avoid lumps.
Heat oil in a skillet over medium heat. Spread out a little of the liver mass with a spoon, forming pancakes. Fry for 2-3 minutes on one side and the same amount on the other. Season with salt after turning.
2. Liver pancakes with onions and sour cream
Ingredients
- 1 onion;
- 4-5 tablespoons of vegetable oil;
- 500 g chicken liver;
- 3-4 eggs;
- 3 tablespoons sour cream;
- 1 teaspoon salt
- 1 pinch of black pepper;
- 70–80 g flour.
Preparation
Cut the onion into small pieces. Brown with 2 tablespoons of oil over medium heat for 3-5 minutes. Place on a plate and cool.
Pass the liver through a meat grinder along with onions. Add eggs and sour cream. Season with salt and pepper. Stir and add flour gradually. Continue stirring to avoid lumps.
Heat the remaining vegetable oil in a skillet. Spread out a little of the liver mass with a spoon, forming pancakes. Fry for 2-3 minutes on each side.
3. Liver pancakes with onions and semolina
Ingredients
- 500 g beef, chicken or pork liver;
- 1 onion;
- salt and pepper to taste;
- 2 eggs;
- 4–5 tablespoons of semolina;
- 2 tablespoons of vegetable oil.
Preparation
Cut the liver and onions into pieces and pass through a meat grinder. Season with salt, pepper and whisk with eggs. Add semolina and mix well again so that no lumps remain. Cover with plastic wrap or a lid and leave for half an hour at room temperature.
Heat oil in a skillet over medium heat. Spread out a little of the liver mass with a spoon, forming pancakes. Fry for 2-3 minutes on each side.
4. Liver pancakes with zucchini
Ingredients
- 1 zucchini;
- salt to taste;
- 800 g beef, chicken or pork liver;
- 1-2 onions;
- 4-5 cloves of garlic;
- 3-5 sprigs of dill or parsley;
- pepper to taste;
- 150 g flour;
- 2 tablespoons of vegetable oil.
Preparation
Grate the zucchini on a coarse grater, salt and leave for 10-15 minutes. Then squeeze out and remove the separated juice.
Coarsely chop the liver, onion, garlic and herbs. Season with salt and pepper. Grind with a blender to get a homogeneous mass. Add the courgette and stir. Add flour little by little and keep stirring.
Heat oil in a skillet over medium heat. Spread out 1 tablespoon of liver mass each, forming pancakes. Fry for 2-3 minutes on each side.
5. Liver pancakes with carrots and onions
Ingredients
- 1 onion;
- 1 carrot;
- 4 tablespoons of vegetable oil;
- 500 g chicken liver;
- 3 eggs;
- 2 tablespoons flour;
- 1-2 tablespoons of starch;
- 1 tablespoon mayonnaise;
- salt and pepper to taste;
- 50-100 ml of milk.
Preparation
Cut the onion into small pieces. Grate the carrots on a coarse grater.
In a skillet, heat half the oil over medium heat. Brown the onions for 3-5 minutes. Add the carrots and cook for another 2-3 minutes. Place on a plate and cool.
Put the liver in one bowl with vegetables, eggs, flour, starch, mayonnaise, salt and pepper. Pour in milk and beat with a blender until smooth.
In a skillet, heat the remaining oil over medium heat. Spoon the pancakes and fry for 2-3 minutes on each side.
6. Liver pancakes with mushrooms
Ingredients
- 100 g of fresh or frozen mushrooms (champignons, honey agarics or others);
- 300 g beef liver;
- 1 small onion;
- 1 clove of garlic;
- 1 egg;
- 50 ml cream or milk;
- salt to taste;
- 3 tablespoons of semolina;
- 2 tablespoons of vegetable oil.
Preparation
Boil the mushrooms until cooked - depending on the type, it will take a different amount of time - and cool. Cut into large pieces along with the liver, onion and garlic. Whisk everything with a blender with egg, cream and salt. Add semolina, stir and cover with foil or lid. Leave at room temperature for 20-25 minutes.
Heat oil in a skillet over medium heat. Spread out 1 tablespoon of liver mass each, forming pancakes. Fry for 3-4 minutes on each side.
