These veggie burgers are another way to incorporate more plant-based protein into your diet. Ideal for anyone who wants to grow big and strong, but is trying to cut back on the amount of meat they eat, or even give it up.
For a burger, you need a bean base, in our case chickpeas, but beans can also be an excellent substitute. For the carbohydrates in the cutlet, cereals are responsible, rice, farro (spelled) or bulgur will do. Further on the list - onions, garlic and herbs (parsley, cilantro), and along with them favorite spices: ground turmeric, coriander, paprika, cumin and, of course, salt and pepper. Flour will help to tie all the ingredients together. If you do eat eggs, add them to the ingredient mixture as well (one egg for two cups of beans).
Beat the boiled chickpeas with a blender or pass through a meat grinder. Add flour and boiled rice to it. For two cups of beans, you'll need about half a cup of rice and a quarter cup of flour. Now it's the turn of chopped onion and garlic. They are followed by a handful of chopped greens and a pinch of your favorite spices. If you did not add an egg, then you can safely try the mixture raw and sprinkle with spices to taste.
Now divide everything into portions of the desired size and mold the patties. It is better to start frying with a small portion in order to follow the consistency: if the mass sticks to the pan, it is better to add a little flour, if it crumbles easily, add water. Feel free to pour more oil into the pan, and if you want to cut fat in the diet, then cook the cutlets in the oven in the manner of falafel at 180 degrees for about 20 minutes.
We collect burgers. You can put a standard set of a circle of tomato, onion, lettuce and pickles with the cutlet, but we settled on arugula and mushrooms fried with leek. As a sauce - a mixture of grain mustard with vegan mayonnaise in a 2: 1 ratio. We spread all this on purchased buns or buns prepared with our own hands.
By the way, it is not necessary to serve cutlets as part of a hamburger, they also make an excellent company for an ordinary salad.
