Beating dry and liquid ingredients separately from each other and then combining them into a homogeneous dough is a classic procedure and familiar to all those who regularly bake baked goods. More often than not, beating liquid ingredients like eggs and cream separately is critical in recipes in which those ingredients are the main "lifting force" of the dough, such as the whipped proteins to stable peaks in the classic "Angel Biscuit" recipe. In this recipe, the dough will become lush due to the abundance of soda, or rather carbon dioxide, which it will release after the reaction with vinegar, and therefore our main task is only to perfectly mix the ingredients until smooth, which we will do.

All dry ingredients are sent first to a deep bowl. Of course, we pre-sift flour and cocoa.

Then we carefully connect all the components together with a whisk. It will take at least a minute to stir, since it is incredibly important for us to make sure that the baking soda is evenly distributed in the mixture, otherwise the dough may rise fragmentarily.

Now we turn to liquids and without hesitation, pour in milk and vegetable oil, and then add eggs and soft butter.

To knead, you have to switch to heavy artillery and replace the whisk with a full-fledged mixer: knead the dough for 30 seconds at minimum speed, and then beat for another 3 minutes at maximum, periodically passing along the sides and bottom of the bowl with a spatula.

Pour the dough into a 20 cm baking dish, after covering the bottom with oiled parchment and greasing the walls with oil. It will take about an hour to bake the cake at a temperature of 180 degrees. Readiness, as usual, is checked with a stick, toothpick or match.

First, cool the air cake in a mold for about 20 minutes, and then remove and turn it upside down, allowing it to cool completely.

Serve the finished cake sprinkled with icing sugar, cocoa or ganache. However, in the latter case, you will have to stain one more bowl …
