Whoever the idea of preparing a full dinner in one dish belongs to, we can only express our gratitude to him on behalf of all those who want to reduce the time spent at the stove to a minimum. This flavorful chicken herb lemon rice is a healthy, inexpensive and quick dinner option to prepare on days when you don't feel like cooking.
Ingredients
- 2 large pieces of chicken fillet;
- 30 ml of vegetable oil;
- 3 teaspoons of a mixture of dried Italian herbs;
- 1 cup rice
- 520 ml chicken broth (or water);
- ½ lemon;
- parsley;
- slices of lemon for serving.
Preparation
Having cleaned the chicken fillet from films and possible skin residues, rub the meat with a pinch of salt and pepper, and then fry in heated vegetable oil exactly until the fillet is browned.
Transfer the chicken meat to a plate, and in the same pan, without rinsing it, add the washed rice. Squeeze the juice out of the lemon. Mix the rice with a couple teaspoons of dried herbs and pour over half of the lemon juice.
Spread the rice evenly over the pan and place the chicken fillet on top. Drizzle the leftover lemon juice over the fillet and sprinkle with the remaining dried herbs. Pour in chicken stock or water.
Covering the dishes with a lid, let the rice and chicken cook over low heat for 20-25 minutes.
Serve the finished dish, sprinkle with parsley and lay out lemon circles, which can additionally acidify rice and chicken if desired.
