This extraordinarily tasty, delicate and aromatic cake is very easy to prepare.
This cake is remarkable not only for its taste, but also for the history of its appearance. Elizaveta Alekseevna, the wife of Alexander I, did not like honey and, if she noticed it in a dish, she could severely punish the cook.
The court cooks changed frequently, and not everyone had time to get acquainted with the whims of the empress. So it happened with the new pastry chef: he prepared a delicate dessert based on honey. The cake came out unusually tasty and melting in the mouth. But everyone was afraid of Elizaveta Alekseevna's verdict.
To the surprise of many, upon learning about the composition, the empress laughed and ordered to encourage the young chef for his talent. Since then, "Medovik" has become a favorite dessert of Elizaveta Alekseevna, and after a while, of the whole country.
Ingredients
For the test:
- 2 eggs;
- 100 g butter;
- 1 cup of sugar;
- 2 tablespoons of honey;
- 1 ½ teaspoon of baking soda
- 3 cups flour;
- 1 teaspoon baking powder.
For the cream:
- 500 g sour cream 20% fat;
- ½ cup sugar.
Preparation
Combine eggs, butter, sugar and honey. Place the mixture in a water bath or over low heat if the pan has a thick bottom.
Stir constantly to prevent the eggs from boiling and the mixture becomes homogeneous. Heat the mass until the ingredients are completely dissolved for about 7 minutes.
Add baking soda and continue stirring for another 5-7 minutes.
Remove from heat. Add flour and baking powder and knead the dough. If it comes out thin, add more flour. The consistency of the mass should resemble plasticine.
Wrap the dough in plastic wrap and refrigerate for 1 hour.
Divide the rested dough into 10-12 pieces and roll out thinly. Calculate the thickness and diameter of the cake based on the amount of dough and the size of the mold.
Bake each cake for 3-4 minutes in an oven preheated to 180 ° C.
Put the finished cakes to cool, and at this time prepare the cream.
In a deep bowl, combine sour cream and sugar. Beat a little with a mixer or spoon.
Coat the cakes (except one) with the resulting cream and carefully place on top of each other.
Don't forget to apply the cream to the sides of the cake as well.
Grind the remaining crust into crumbs and sprinkle the cake on it.
Leave the finished "Medovik" to soak for at least 2 hours. Garnish with berries, fruits or nuts as desired.
