As a busy mom, I decided to reconsider my attitude to family life and realized that most of the household chores that I did myself can be assigned to my children.

Instead of just satisfying their whims, I decided that now was the time to teach them to be strong, independent and self-reliant - that is how I would like to see them.

This decision entailed several changes. For example, I no longer had to spend a lot of time preparing school lunch for the children. It was a great opportunity to motivate children to cook on their own.

We've put together some simple healthy food recipes, and I've taught my kids how to make anything other than sandwiches.

All my children (and I have four of them) turned out to be capable of cooking. Previously, I did not know this and believed that their maximum is flakes with cold milk. Even my little ones started to make their own school breakfasts on their own, in addition, they could figure out something for themselves to eat after school.

We have a small list of recipe ideas that is attached to the refrigerator, and I always make sure that the kitchen has the necessary ingredients.

Our favorite food right now is baked eggs because it's a great way to get the protein we need.

If kids want to make this meal, I suggest they look in the refrigerator to find various ingredients that will complement it wonderfully. It's very easy to create different variations by adding something new.

Here are some of our favorite ingredient combinations:

  • 1 egg + chopped mushrooms + parmesan
  • 1 egg + tomatoes + basil;
  • 1 egg + diced ham + cheddar cheese + green onions + tomatoes
  • 1 egg + parmesan + chopped spinach + garlic
  • 1 egg + cilantro + salsa sauce + diced sausage.

Baked eggs in 2 minutes

Ingredients (1 serving):

  • vegetable oil;
  • 1 egg;
  • 2 tablespoons milk or cream (can be substituted for unsweetened almond or soy milk)
  • 1/2 cup of your favorite ingredients, diced (we use ham, basil, tomatoes, bacon and onions)
  • a pinch of salt and pepper.

Cooking method:

  1. Take two tablespoons of vegetable oil and brush over a mold. Set aside.
  2. Toss eggs and milk (or cream), ingredients of your choice, salt and pepper in a medium bowl. Pour the mixture into a baking dish.
  3. Place the dish in the microwave, bake until tender (about 2 minutes, but depends on the microwave power. It is recommended to bake like this: 30 seconds, then again 30 seconds, and then 1 minute, as the egg rises and may flow out of the bowl). Let cool slightly and then remove from the microwave using an oven mitt. Eat and enjoy before it gets cold!
