  • a small bunch of arugula;
  • 1 tablespoon olive oil
  • 1 clove of garlic;
  • 1 teaspoon lemon juice
  • a pinch of salt.

The star of this dish will not be so much the base of the tortilla as the sauce that looks like a simplified version of pesto. The classic pesto is made from basil and is complemented by parmesan and pine nuts. We eliminated parmesan and nuts, but added arugula, which will give a pleasant bitterness.

Mix equal parts basil greens (green or purple) with arugula. Add the garlic clove, salt and chop well to make a paste. Combine it with butter and lemon juice.
