These desserts do not contain animal ingredients, so they can be safely classified as lean. Today we publish the first four.;)

Recipe number 1. Orange

Ingredients (for 2 servings):

  • 1 cup of your choice of plant-based milk
  • 1/2 cup freshly squeezed orange juice
  • zest of 1 orange;
  • 2 tablespoons maple syrup or honey
  • ¼ cups of chia seeds;
  • nuts, coconut flakes, any frozen berries and orange slices for decoration.

Preparation

Combine milk, orange juice, orange peel and honey or maple syrup. Add chia seeds and mix well. Put it in cups or bowls, let it stand for literally 5 minutes, mix well again and send it to the refrigerator for several hours or overnight. Sprinkle with nuts, coconut, orange slices and berries (optional) before serving.

Recipe number 2. Apple cinnamon

Ingredients (for 2 servings):

  • 2 cups unsweetened plant-based milk
  • ½ teaspoon of vanilla extract or a pinch of vanillin;
  • ⅔ cups of chia seeds;
  • 2 tablespoons of coconut flakes
  • 2 apples, peeled and cut into thin wedges;
  • 2 teaspoons of cinnamon.

Preparation

This pudding is served warm. To prepare it, pour milk with vanilla extract into a saucepan and heat over low heat for 2-3 minutes. It doesn't have to be hot, just warm. Place the chia seeds in a deep bowl and cover the seeds with milk. Stir continuously for about two minutes while the chia seeds absorb the milk. Then leave for 5 minutes, add apples, coconut and cinnamon on top and serve. If you do not want warm pudding, then you do not need to heat the milk at all. Just do the same thing, but with milk at room temperature. You can also add some honey.

Recipe number 3. Coffee

Ingredients (for 4 servings):

  • 1½ cups brewed coffee (decaffeinated)
  • 2 tablespoons of cocoa;
  • ½ cup coconut milk
  • 1¼ cup of almond milk
  • ¼ cups of honey;
  • 1 cup chia seeds
  • 2 scoops of chocolate protein powder (optional).

Preparation

Simply mix all the ingredients in a bowl, pour into cups or bowls and refrigerate for 4-6 hours.

Recipe number 4. Berry

Ingredients (for 2 servings):

  • 1 cup coconut milk
  • 1/2 cup frozen or fresh berries
  • ¼ cups of chia seeds;
  • honey to taste.

Preparation

Whisk coconut milk, honey and berries with a blender. Place in glasses, add chia seeds, mix well and refrigerate for a few hours or overnight.

To be honest, I didn't expect it to be so delicious. In terms of consistency, such a dessert is somewhat reminiscent of passion fruit, only it is thicker and with smaller and softer seeds. My favorite of the four is coffee, but I didn't add any chocolate protein powder. I think it would be even tastier with him. Yablochny was in last place.

During the preparation, I used walnut milk, and instead of coconut milk, there was coconut cream. They are much thicker than coconut milk, and the pudding is thicker. If you are happy with that, fine, but if you want to make the dessert more liquid, then you need to either add a little less chia seeds, or use less coconut cream and more plant milk.

For the berry pudding, I chose blueberries, and during the preparation of desserts, I did without coconut chips, since I don't really like them.

Another point that I would like to dwell on: be sure to mix the seeds both while pouring them with liquid and after they have stood for 5 minutes, before going to the refrigerator. If you don't stir, you will end up with a lumpy pudding.
