You don't need to be a born chef to make this cake. It is enough to know how to use a blender and chop pears.
The pear pie looks very fluffy and airy. But when you taste it, you are confused: the dough is soft and at the same time very dense and rich. The cake is sweet, but not cloying, with a light citrus note. The combination of cinnamon and pear aromas can be maddening, as can the pleasant crunching of nuts. And one piece will definitely not be enough to appreciate this dessert.
Ingredients
- 180 g flour;
- 250 g sugar;
- 1 teaspoon cinnamon
- 1 ½ teaspoon baking powder
- 100 g of walnuts;
- 250 g of natural yogurt;
- 40 g butter;
- 3 eggs;
- zest of 1 lime;
- zest of 1 orange;
- 2 pears.
Preparation
In a deep bowl, combine flour and sugar.
Add cinnamon and baking powder. Stir well with a whisk.
Grind the walnuts in a blender. Add half to dry ingredients.
Stir until smooth until the dough is airy.
Add yogurt and melted butter to the dry ingredients.
Next, break the eggs into a bowl. Stir the resulting mixture.
On a grater, grate the orange and lime zest. Lime is easily replaced by the lemon that is more familiar to us.
Add the zest to the dough and mix well again.
Wash and dry the pears. Cut one into thin slices, the other into pieces.
Roll the pear pieces in flour so that they do not settle to the bottom of the mold when baking. Add to dough.
Prepare a baking dish. Place parchment paper on the bottom. Grease the walls of the mold with cold butter, dust with flour on top.
Gently pour the dough into a mold and tap on the table to remove any bubbles.
Spread the pear slices on top and sprinkle with chopped nuts.
Bake in an oven preheated to 180 ° C for 25-50 minutes, depending on the size of the dish. Check readiness with a toothpick or match.
Serve the finished pear pie hot. Add a scoop of ice cream if desired.
