It all started with the introduction of delicious homemade pastries in our sports bar: open mini-pies with apples. The dough was clearly from first grade wheat with the addition of bran and oatmeal, but in response to our questions about how it was prepared, the bartender just threw up his hands. Then I decided to try several recipes for similar cookies and pies and choose the best option! So consider that this post is the result of a love of experimentation and a desire to find an answer in any way.;) Athletes are people too and love sweets too!
Ingredients
For the test:
- 1 ⅓ cup oatmeal
- ¾ glasses of walnuts or almonds;
- 1 tablespoon honey;
- 3 tablespoons of sugar;
- 2 teaspoons apple pie spice mixture (cinnamon, nutmeg, vanillin)
- 1 teaspoon baking powder
- ½ small apple;
- ¼ cups of applesauce
- 1 large egg
- ¼ cups chopped walnuts, almonds, pecans, or raisins (optional)
For glaze:
- 2 ½ tablespoons of powdered sugar;
- 1 tablespoon honey;
- ½ teaspoon cinnamon
- a few drops of cold water;
- a few chopped nuts for dusting (optional).
Preparation
Send the oatmeal to a blender and grind it into flour. Place in a separate bowl. Then grind the nuts, add honey and grind for another 5 minutes.
Add sugar, spices and loosen into the set oatmeal. Peel the apple, cut it into very small pieces (almost like a minced onion) and put it in a small bowl.
Add applesauce and an egg to the honey-nut mixture, mix everything well until smooth. Pour this mixture into oatmeal and add the finely chopped apple and chopped nuts (if you choose to use them). Mix everything well again.
Preheat the oven to 180 degrees. Line a baking sheet with baking paper and spoon out the thin cookie dough. Bake for 13-15 minutes or until golden brown.
To make the frosting, combine all ingredients except the nuts. Wait for the cookies to cool, and gently apply the mixture with a special brush, and then, if you wish, sprinkle with chopped nuts.
The cookies turned out to be very tasty. True, I had to tinker a little with the dough: I did not have ready-made applesauce, and therefore I cooked an apple with sugar and water.
