- 12 large basil leaves;
- 5 cloves of garlic;

Preparation
Coarsely chop the basil, garlic and onion. Dip the tomatoes in boiling water for a minute or two. Then remove, cool, peel and cut into halves or quarters.
Place basil, garlic, onion, oil, salt and pepper in a saucepan. Heat over medium heat for 30-40 seconds. Add the tomatoes, bring to a boil and cook for at least 30 minutes, stirring constantly. When the sauce has thickened and reduced in volume by half, turn off the heat, cover the saucepan with a lid and leave for 15 minutes.
If you want the sauce to be more uniform, punch through it with a blender.
2. Tomato sauce with oregano
Ingredients
- 1 kg of tomatoes;
- 5 cloves of garlic;
- 1 onion;
- 2-3 sprigs of oregano;
- 5-6 sprigs of basil;
- 1 tablespoon olive oil
- 1 teaspoon salt
- ¼ teaspoon black pepper;
- 300 ml of water;
- 4 tablespoons tomato paste.
Preparation
Cut the tomatoes into medium-sized cubes. Chop the garlic, onion, oregano and basil.
In a large saucepan, heat oil over low heat. Add onion, garlic, salt and pepper. Cook for 3 minutes and stir constantly. Then add 60 ml of water and tomato paste.
After 1 minute, place the tomatoes in a saucepan, cover with the rest of the water and stir. Cover and simmer over medium heat for another 10 minutes.
Remove from heat and work the sauce with a blender to the desired consistency. Then add the herbs and beat again.
3. Tomato sauce with rosemary
Ingredients
- 1½ kg of tomatoes;
- salt to taste;
- 4 cloves of garlic;
- 4 sprigs of rosemary;
- 120 ml olive oil;
- 2 tablespoons of butter.
Preparation
Cut the tomatoes into halves and grate on a coarse grater, holding the peel. Salt. Chop the garlic and rosemary.
Heat olive oil in a saucepan over medium heat. Fry the garlic for 2-3 minutes until golden brown. Add rosemary and continue cooking for 1 minute. Add the tomatoes, bring to a boil and cook for 5-10 minutes, until the sauce thickens.
Remove from heat, add butter and stir.

Ingredients
- 1 kg of tomatoes;

Preparation
Cut the tomatoes into halves. Chop the garlic.
Pour oil into a baking dish. Sprinkle with garlic, seasoning, sugar, salt and pepper. Arrange the tomato halves, cut side down.
Bake in an oven preheated to 200 ° C for 30-40 minutes. Then cool the tomatoes. Remove the skin from them, put them in a deep bowl and mash with a fork.

Chop the onion and the rest of the greens. Whisk with a blender with the tomatoes. Add sour cream, paprika, salt and pepper and stir.
6. Tomato sauce with ginger and honey
Ingredients
- 6 tomatoes;
- 4-5 sprigs of parsley;
- 1 chili pepper;
- 1 piece of ginger about 1–2 cm long;
- 270 ml of water;
- 1 teaspoon salt
- 1 tablespoon honey;
- 1 teaspoon of cumin;
- 1 teaspoon coriander
- 3 tablespoons of butter.
Preparation
Pour boiling water over the tomatoes for a minute or two. Then cool, peel and divide into small pieces.
Chop the parsley, chili and ginger. Add 30 ml of water to them and beat with a blender. Add salt, honey, cumin and coriander. Stir.
Place the tomatoes in a saucepan. Cover with remaining water and cook for 15 minutes over medium heat. Rub the mass through a sieve.
In a saucepan or deep skillet, melt the butter over medium heat. Add mashed tomatoes and ginger mixture. Simmer over medium heat for 25-30 minutes, until the sauce thickens.
