To make a cream for cakes and other desserts, use heavy whipping cream. They can be replaced in two ways.

Milk and butter

You will need milk with a fat content of 2, 5-3, 5% and high-quality butter with a fat content of 82, 5% in equal proportions.

Such butter-milk cream is thick and tender. They taste no different from ordinary ones. Suitable for interlayering and filling desserts.

Grate the butter directly over the milk container. You can simply cut it into pieces. Put the mixture in a water bath and, stirring, cook until the oil is completely dissolved. Never bring the liquid to a boil.

Pour the mixture into a blender bowl with knives and whisk for 3 minutes. You can also use an immersion blender, but there is a possibility that the mixture will not reach the desired consistency. The mass must be homogeneous. Transfer it to a container with a lid, close and refrigerate for 8 hours.

Then beat the mass with a mixer, like regular cream, starting at low speed. When the mixture begins to thicken, you can add sugar or powdered sugar to it. The main thing is not to overdo it with whipping homemade cream, otherwise they may stratify.

Sour cream

Sour cream can be whipped in the same way as heavy cream. But first you need to get rid of excess moisture.

Sour cream, unlike butter, will come out with a slight sourness. But it is very delicate and keeps its shape well.

You will need sour cream with a fat content of 20%. From 500 g, you get about 300 g of thick. You can use a product with a fat content of 15%, but sour cream without excess moisture will be less in this case.

Fold regular cheesecloth in 5-6 layers and cover the colander with it. Put the sour cream there. Gather the corners of the gauze and tie on top to form a pouch.

Hang it over a container where the liquid will drain. Leave on for 6-8 hours at room temperature. If the room is very hot, put it all in the refrigerator.

During this time, the sour cream will become thick. Transfer it to a clean bowl and beat with a mixer, starting at low speed and gradually increasing. Add sugar or powdered sugar in the process. Vanillin can be added for a pleasant aroma.

How to replace cream in pasta

For this, milk mixed with butter is suitable. The cooking principle is the same as in the method above. Only you don't need to whip the chilled homemade cream.

If you want to make the cream less greasy, change the proportions of milk and butter. For cream with a fat content of 20-25%, the proportion will be 1.5: 1 (for example, 200 ml of milk and 130 g of butter), and for a fat content of 10-15% - 3.5: 1 (for example, 200 ml of milk and 60 g of butter) …

Homemade milk and butter cream made according to the recipe above will do. Determine the fat content to your taste.

You can also use sour cream. If it is thick, dilute it with water or milk to taste. But remember that sour cream will add a characteristic sourness to the dish.
