Mulled wine is a heated red wine with sugar and spices. This is the foundation. And you can experiment with it. The main thing is not to forget about a few rules.

Of the spices, cinnamon, cloves, ginger, star anise and citrus peels - mostly lemon - are usually put in mulled wine.
What can be added
For the sake of a richer taste and aroma, nutmeg, cardamom, allspice and black pepper and even bay leaves are added to mulled wine.
Quite often, pieces of fruit are used to prepare a drink: apples, lemon and orange. You can also add raisins, dried barberries, cranberries and nuts.
Juice is another common ingredient. Usually they take orange, apple, cranberry or cherry. Experimental lovers can add coffee, black tea, cognac or rum to mulled wine.

- 1 teaspoon cinnamon
- ½ lemon;
- 1 apple;
- 2-3 cm of ginger root;
- 750 ml of red semi-sweet wine;
- 250 ml of apple juice;
- 2-3 sticks of cinnamon;
- 2-3 grains of cardamom;
- 1-2 carnation buds;
- 3 allspice peas.
How to make mulled wine
Pour sugar into a small bowl and mix with cinnamon. If using honey, save it for later. Honey is added to a saucepan at the very end of cooking or to glasses with an already poured drink.
Remove the rind from the lemon and cut the pulp into circles.
Chop the washed apple into large pieces.
Peel the ginger root. It is faster and easier to do this with a teaspoon, scraping off the skin with it. Cut the ginger into thin slices.
Pour red wine and apple juice into a saucepan.
Put on low heat and add lemon pulp, citrus peels and apples.
Add a mixture of sugar and ground cinnamon (or just cinnamon if using honey), ginger, cinnamon sticks, cardamom, cloves and allspice.
Heat the wine to 70–80 ° C: steam will appear over the pan, and you will hear something like a gurgle.
Mulled wine should not be boiled, otherwise the taste of the wine will evaporate along with the liquid.
Cover the drink with a lid and remove from heat. To keep the heat longer, you can wrap the pan with a towel. Insist 10-15 minutes or a little longer.
Strain the present mulled wine with a sieve or cheesecloth.
By the way, there is another cooking method. Bring 150-200 ml of water to a boil in a saucepan, add spices and cook for about 10 minutes. After that, fruits, juice and wine are added to the aromatic water.
How to serve mulled wine
This drink is drunk hot. Ideally, it should be poured into tall, thick glass goblets. In such dishes, mulled wine will cool more slowly.
You can decorate the drink before serving. For example, put inside a cinnamon stick, an anise star, a slice of lemon or orange, berries. Or stick cloves into a circle of citrus and place it on the edge of the glass.
