Ingredients
Dough:
- 2 eggs;
- 115 g butter;
- 110 g sugar;
- 20 g cocoa;
- 1 tablespoon red food color gel
- 95 g flour.
Filling:
- 130 g cream cheese;
- 1 egg yolk;
- 35 g sugar.
Preparation
Brownies should be stringy and quite dense, so there is no need to be zealous with beating eggs, as is often done when making biscuits. When the whites and yolks have come together, you can stop.
Cut the butter into cubes and melt on the stove top or in the microwave. Let cool slightly and whisk with sugar.
Then add the eggs and whisk the mixture well.
Now the resulting mass can be combined with sifted cocoa and flour. When adding dry ingredients, knead the dough with a spoon exactly until you get a homogeneous mixture. With prolonged kneading, the gluten of the flour begins to gain strength - you can get a crust as hard as a sole.
Color the dough with red gel food coloring.
Line a square shape about 20 x 20 cm with parchment, brush with a drop of oil and spread the dough. Save about half a glass of dough for decoration.
Whisk the ingredients of the cheese filling and spread them evenly over the surface of the dough with a silicone spatula. Spoon the portions of the remaining cheese-based dough in random order. Stir the top layer of dough and cheese filling together using a table knife or toothpick to create a marbled pattern.
Bake the brownies at 180 degrees for 30–35 minutes. Then remove from the mold, cut, and after complete cooling, you can taste.
