1. Water
Boiled water and tap water are not suitable for making coffee. You can take filtered or bottled. Cool her down. Then, slowly heating up, the water will absorb more flavor from the grains.
2. Coffee
Coffee beans, ground just before brewing, will reveal the aroma and taste of the drink. An open package of ground coffee will lose its aroma in a week. Depending on the country of origin, coffee has different flavors and aromas. The more the beans are roasted, the more bitter and strong the drink will be. You can choose from several varieties and roasts and make your own blend. The main thing is to make sure that your coffee is of excellent quality.
If you bought a lot of coffee beans at once, divide them into pieces. Each should have as much coffee as you drink in a week. Store one portion in the kitchen in a ceramic or opaque glass jar with a tight-fitting lid. Place the rest in hermetically sealed opaque bags - one part each. Store them in the freezer.
Take out a new batch of coffee in advance so that it warms up to room temperature before brewing. Freezing allows you to preserve the taste and aroma of the grains for two months. But it is better not to keep the grains in the refrigerator. They can become damp and absorb odors.
3. Grinding
If you are making coffee in a Turk, then a very fine grind (almost like flour) will do. The slightly larger particles can be used to prepare an espresso in the coffee machine. A medium grind is good for a geyser coffee maker. Coarse grinding is used in French presses.
If coffee of different grind is used for the same method, the taste and aroma of the drink will be different. Experiment and find the one that works best for you. Or maybe it will be several options - according to the mood.
4. Turk
The Turk is the ideal container for brewing coffee. There are copper, steel, ceramic, one or more cups, with one or two spouts.
There are cylindrical Turks with straight walls and conical ones. The latter are more convenient to use. The wide bottom allows the beverage to heat up faster, while the narrow neck helps preserve the coffee aroma. In terms of volume, select a Turk a little more than the required volume of coffee, then the foam will not escape to the stove.
5. Salt
Salt allows the drink to unfold, enhances the aroma and taste. Only a few very coarse crystals are needed per Turk.
6. Ginger
Ground ginger goes well with coffee. You need to add it to freshly ground grains before pouring water into the Turk.
7. Other spices
In addition to ginger, cinnamon, anise, cardamom, and pepper can be added to coffee when brewing. A slice of lemon or orange peel will give the drink an interesting taste. All spices are added to the cooking utensils before water. Lemon or zest is placed after cooking, already in a cup.
8. Brown sugar
Sugar reduces the strength of the coffee slightly. You need to add it during the cooking process. It is better if it is unrefined cane sugar. Determine the quantity yourself, to taste.
9. Preparation
For 100 ml of water, you need about 8 g of coffee.
Grind the coffee beans. Pour the powder into the Turk. If you want to add salt or spices, do it now. Pour cold clean water up to the point of constriction of the turk. Put on a small fire. Do not hurry. The slower and calmer the brewing process, the richer the drink will be.
Wait until the coffee starts to rise and remove the Turk from the heat. Leave it on for about 30 seconds, return to the stove. The liquid should rise three times. Make sure the coffee does not boil. It is important to remove the Turk from the fire at the moment when the foam starts to rise. If she runs away, most of the scent will disappear. Therefore, do not leave the kitchen anywhere and do not be distracted.
10. Finishing the process
After removing the coffee from the stove a third time, let it breathe for a minute. If you want to stir the drink so that the suspension sinks to the bottom and the liquid in the cup is cleaner, do it now.
