In another pursuit of recipes for natural homemade sweets, we present to your attention a simple recipe for lucuma based on cranberry juice - what you need in the berry harvest season.
We'll add rose water to the base variation of this oriental treat, but you can add nuts, dried berries, or coconut to add texture variety.
First, fill the gelatin with a mixture of berry juice (room temperature) and rose water. In our case, the berry base is natural cranberry juice, but you can replace it with any berry juice to taste.
While the gelatin is swelling, prepare a starch solution by mixing the starch with half a glass of water.
The only cooking step that will require you to be careful is to boil the syrup. If you have a special pastry thermometer, no problem: mix honey and granulated sugar with the remaining water, put everything on fire and cook until the solution reaches a temperature of 112 ° C. Without a thermometer, readiness is determined by dropping a little syrup into cold water: the properly cooked syrup can then be removed and rolled into a soft ball. The cooking time for the syrup of the required consistency ranges from 15-18 minutes from the moment the dishes are placed over a medium-strength fire.
We mix the starch solution again, since during the cooking of the syrup, the starch itself precipitated and became sticky. Pour the starch into the syrup. Next, we send the swollen gelatin and mix everything until the latter completely dissolves.
Optionally add 2-3 drops of gel food coloring to the mixture.
Cover the mold with cling film, sprinkle with powdered sugar and pour the mixture over the top.
Use a spoon or spatula to remove the foam from the surface, then leave the treat to harden at room temperature for 5 hours, or better all night.
Carefully separate the prepared Turkish delight from the film, cut and roll in powdered sugar.

Ingredients:
- 1 + 1/2 cups of water (360 ml);
- 3 cups granulated sugar (600 g);
- 3 tablespoons of honey (45 ml);
- 3/4 cup starch (120 g)
- 1/2 cup berry juice (120 ml);
- 21 g gelatin;
- 1-2 drops of food coloring;
- 2 tablespoons of rose water (30 ml).
Preparation
- Pour the gelatin with room temperature berry juice and rose water. Leave it to swell while preparing the rest of the ingredients.
- Dissolve the starch in half a glass (120 ml) of water.
- Pour sugar and honey with the remaining water. Place the saucepan with the mixture over medium heat and simmer for 15-16 minutes (up to 112 ° C). Readiness to determine the soft ball breakdown.
- Dissolve the starch in the hot syrup, add the swollen gelatin and mix everything until the granules are completely dissolved.
- Pour the solution into a plastic wrap-covered mold and leave to cure completely at room temperature for 4-5 hours. Cut the prepared Turkish delight and roll in powdered sugar.
