How to prepare porcini mushrooms
Go through the mushrooms. If the caps have leaves or dirt, remove them with a soft sponge. Place the mushrooms in a suitable container, cover with cool water and leave for an hour. Then rinse once or twice.
Inspect the soaked porcini mushrooms, remove any dark spots from the caps, and peel off the stems with a knife. Cut large specimens into halves or medium-sized pieces. Small ones can be left intact. If the mushrooms are wormy, discard them.
Cook the frozen porcini mushrooms immediately after removing them from the freezer.
Pour boiling water over the dried mushrooms and leave for 2 hours.
How much to cook porcini mushrooms
The cooking time depends on how you will use the product further. In addition, small and medium-sized mushrooms reach readiness faster than large ones.
After boiling, cook fresh porcini mushrooms:
- for frying - from 20 to 30 minutes;
- for freezing - 15–20 minutes;
- for salting - 30-40 minutes;
- for marinating - 30-40 minutes;
- for soup - 30-40 minutes.
Cook fresh-frozen mushrooms for 30-40 minutes, and boiled-frozen ones for 20-25 minutes. Dried are taken only for soup, having previously boiled them for 20 minutes.
It is not difficult to determine that the porcini mushrooms are ready: they will sink to the bottom of the pan.
How to cook porcini mushrooms
Place the mushrooms in a saucepan and cover with room temperature water. For dried ones, you can also use the water in which they were soaked. Add salt, 1 teaspoon per liter is sufficient, or less if mushrooms are needed for pickling or pickling.
Bring to a boil over high heat, then reduce to low and cook as much as required for further processing.
Skim the foam off the surface of the water while cooking.
If you are not cooking a soup, discard the boiled mushrooms in a colander.
