1. Classic apple pie
Ingredients
For the test:
- 220 g butter + a little for lubrication;
- 300 g flour + a little for sprinkling;
- 2 tablespoons of sugar;
- ½ teaspoon salt;
- 1 tablespoon apple cider vinegar
- 8-10 tablespoons of cold water.
For filling:
- 1 ½ kg of apples;
- 2 tablespoons lemon juice
- 150 g sugar + a little for sprinkling;
- 2 tablespoons flour;
- 1 teaspoon cinnamon
- a pinch of vanillin;
- ¼ teaspoon of salt;
- 30 g butter;
- 1 egg;
- 1 tablespoon of water.
Preparation
Grind the chilled butter and flour, sugar and salt mixture in a blender. Add vinegar and water and knead the dough. It shouldn't stick to your hands. Place the dough on a floured surface, form two equal balls and press lightly with your hands. Wrap with cling film and refrigerate for at least 2 hours.
Grease a round baking dish with butter. On a table sprinkled with flour, roll the dough into a cake with a diameter larger than the diameter of the mold. Place the dough in a mold and press it down to the bottom and sides. Place in the freezer for 10 minutes.
Peel the apples, core them, cut in half and chop into thin slices. Combine them with lemon juice, sugar, flour, cinnamon, vanilla and salt. Spread the filling over the dough and spread small pieces of butter all over the surface.
Roll the rest of the dough into a circle according to the size of the mold, cover the cake with it and hold the edges of the dough firmly together. Lubricate the pie with an egg, beaten with water, and cut a few slots on top to allow air to escape. Sprinkle the sugar over the cake and bake at 220 ° C for 20 minutes. Then another 40 minutes at 190 ° C.
