Try options with raisins, banana, chocolate, nuts and more.
1. Cinnamon Oatmeal Cookies
Ingredients
- 2 eggs;
- 70 g butter;
- 1-2 teaspoons of cinnamon;
- 70 g sugar;
- 150 g of oatmeal that does not require cooking;
- 20 g wheat flour.
Preparation
Separate the yolks from the whites and beat with half the butter, cinnamon and sugar to completely dissolve the crystals. Beat the whites to form a dense foam.
Heat the remaining oil in a skillet over medium heat. Fry the oatmeal for 8-10 minutes, stirring constantly. Cool it down.
Combine the oatmeal with the egg-sugar mixture and flour. Then add the proteins and mix.
Line a baking sheet with parchment paper and spoon the mixture onto it. Bake for about 15 minutes at 180 ° C.
2. Oatmeal Raisin Cookies
Ingredients
- 30 g raisins;
- 150-185 g sugar;
- 1 g vanillin;
- 85 g butter;
- ⅓ teaspoon of salt;
- 50 ml of water;
- ½ teaspoon cinnamon
- 75 g oatmeal or ground oatmeal;
- 170 g wheat flour.
Preparation
Grind the raisins in a blender. Then whisk with sugar, vanilla and butter at room temperature to form a lump-free mixture.
Dissolve the salt in water, add together with cinnamon and oat flour to the resulting mass. Stir and, gradually adding wheat flour, knead the dough.
Roll it out so that the thickness of the layer is about 7–8 mm. Use a glass or a special cookie cutter to make round cookies. Transfer the blanks to a baking sheet lined with parchment paper. Bake for 10-12 minutes at 200 ° C.
3. Oatmeal cookies with honey and sour cream
Ingredients
- 150 g instant oatmeal;
- 200 g wheat flour;
- ½ teaspoon of baking soda;
- 100 g butter;
- 85 g sugar;
- 1 tablespoon of liquid honey;
- 150 ml sour cream;
- 1 egg.
Preparation
Grind the oatmeal in a blender. Combine flour with baking soda.
Mash butter at room temperature with sugar. Add honey, sour cream, egg and beat with a mixer. Then stir in the oatmeal. Stir in the flour and baking soda mixture little by little and knead the dough.
Line a baking sheet with parchment paper and spoon over the cookies. Bake for 10-15 minutes at 200 ° C.
4. Oatmeal cookies with banana, nuts and raisins
Ingredients
- 50 g cashews or other nuts;
- 50 g raisins;
- 1 banana;
- ½ teaspoon vanilla sugar;
- 80 ml of milk;
- 90-100 g of oatmeal.
Preparation
Chop the nuts. Pour the raisins with boiling water for a short time, then rinse.
Mash the banana with a fork. Mix first with sugar and milk, then with oatmeal. Note: Cookies made from oatmeal, which need to be cooked, are healthier, but tougher. If the latter confuses you, use instant cereal.
Add raisins and nuts. Leave the dough at room temperature for 20-30 minutes.
Line a baking sheet with parchment paper and spoon over the cookies. Bake for about 10-15 minutes at 180 ° C.
5. Oatmeal cookies with carrots
Ingredients
- 100 g carrots;
- 30-50 g of walnuts;
- 80 g butter;
- 100 g cane sugar;
- 1 teaspoon vanilla sugar
- 1 egg;
- 50 g oatmeal;
- 100 g flour;
- ¼ teaspoon baking powder.
Preparation
Grate the carrots on a medium or fine grater. Chop the nuts.
Whisk butter at room temperature with cane and vanilla sugar, egg. Then stir in the carrots and oatmeal. If you use flakes that require cooking and they seem tough to you, soak them in water or milk for 10 minutes before adding to the dough, and then squeeze.
Add flour and baking powder, knead the dough and refrigerate for 10-15 minutes.
Line a baking dish with parchment paper and spoon out the cookies. Bake for 20-25 minutes at 200 ° C.
6. Oatmeal cookies with chocolate and nuts
Ingredients
- 100 g of chocolate;
- 100 g of hazelnuts or other nuts;
- 110-120 g of oatmeal;
- 150 g wheat flour;
- 1 pinch of salt;
- 1 teaspoon baking powder
- 100 g butter;
- 160 g sugar;
- 1 egg.
Preparation
Chop the chocolate and nuts. Grind the oatmeal in a blender. Combine with flour, salt and baking powder.
Combine butter at room temperature with sugar and an egg, then add chocolate and nuts. Stir in flour mixture and refrigerate for an hour.
Line a baking sheet with parchment paper and spoon over the cookies. Bake for 10-12 minutes at 180 ° C.
