If you are looking for leftover mashed potatoes from yesterday's dinner and want to turn the side dish into a new dish, then these balls are ideal. You can supplement the potato base with almost anything, but we settled on the option with feta cheese and herbs.
Ingredients:
- 720 g mashed potatoes;
- 80 g feta cheese;
- 1 tablespoon fresh dill
- 1 tablespoon green onions
- ½ cup flour;
- 2 eggs;
- 1 ¼ cup bread crumbs
Of course, you can make mashed potatoes specifically for this snack only, but in that case, make sure it's chilled as much as possible.
In addition to the puree itself, as we noted above, you can add anything you want to the balls: hard cheeses, pieces of bacon and ham, fried vegetables, spices, dried herbs, garlic and even pieces of fish.
If you are using fresh puree, chances are that it does not hold its shape very well. In this case, in addition to various flavors, flour should be added to the ingredients, up to 1 cup. The amount of flour is determined individually: the finished mixture should be molded into a ball and not be excessively sticky.
When the potatoes are ready, prepare the breading ingredients: flour, beaten eggs, and bread crumbs. Divide the potato mixture into portions. Practice has shown that it is better to divide the mixture into 20-24 medium-sized balls: this way they will fried more evenly in the center.
After forming balls of mashed potatoes, each of them is sprinkled with flour, dipped in an egg and rolled in breadcrumbs. If the mass is sticky, then sprinkle flour on your hands and form balls with them.
The breaded balls are immersed in an abundance of heated oil and fried for 3-4 minutes until a pronounced golden hue. An alternative to frying is baking for 7-10 minutes at 200 degrees.
Potato balls are the perfect beer snack, so it's best served with your favorite sauce and a glass of froth.
