Quick snacks, salads, main courses and fruit desserts - for those occasions when guests are already on the doorstep.
1. Chips with mushroom dip
Cooking time: 15 minutes
Ingredients
- 4 large fresh mushrooms;
- 350 g sour cream;
- 2 tablespoons of butter;
- ½ cup flour;
- a bunch of dill;
- salt to taste;
- 2-3 packs of chips.
Preparation
Melt butter in a saucepan over low heat. Add flour and stir so that there are no lumps. If there is too much of it, add more oil. Put the sour cream there. Chop the mushrooms and dill finely and add to the saucepan. Season with salt and cook, stirring constantly, for about 10 minutes. Ready! This amount of dip is enough for two or three large packs of chips.
2. Champignons with light green dip
Cooking time: 10 minutes
Ingredients
- 500 g fresh champignons;
- 1-2 eggs;
- flour or bread crumbs;
- vegetable oil for frying;
- 1 large onion
- a bunch of parsley;
- a bunch of green onions;
- 500 g sour cream or thick natural yogurt;
- salt, black pepper to taste.
Preparation
Champignons can be cut into slices or left whole. Combine eggs with salt and black pepper. Dip the mushrooms in this mixture, dip in flour or breadcrumbs and fry in oil until golden brown.
With a dip, everything is also simple: chop all the ingredients and mix with yogurt or sour cream. This sauce can also be served with chips in addition to the previous dip, or with sliced vegetables or bread.
3. Vegetable slices with bean dip
Cooking time: 15 minutes
Ingredients
- 2 cans of canned white beans
- 2 teaspoons lemon juice
- 2 cloves of garlic;
- 6 tablespoons olive oil
- a pinch of hot red pepper;
- black pepper, salt to taste.
Preparation
Place the beans and garlic in a blender and chop. Continue whisking the mixture, gradually adding olive oil, lemon juice, salt and black pepper. Place the dip in a large bowl, drizzle with a little oil and sprinkle with red pepper.
Chop any vegetables - cucumbers, carrots, radishes, or celery. Serve baguette slices or crisps. Due to the beans, the dip turns out to be very satisfying, so such an appetizer can replace a light dinner.
4. Lavash rolls with cheese
Cooking time: 20 minutes
Ingredients
- 2 thin pita bread;
- 4 eggs;
- 200 g of hard cheese;
- a bunch of parsley;
- a bunch of dill;
- 3 tablespoons sour cream;
- salt to taste;
- vegetable oil for frying.
Preparation
Boil the eggs. At this time, grate the cheese, chop the herbs. Slice the pita bread into wide strips. When the eggs are boiled, cool them under cold water and mash with a fork. Mix eggs with cheese and herbs, add sour cream and stir again. Put the mixture on the pita bread and roll up the rolls. Fry them in vegetable oil until golden brown. If you are running out of time, you can simply heat the rolls in the microwave.
5. Tomatoes in batter
Cooking time: 15 minutes
Ingredients
- 3-4 tomatoes;
- 200 g of hard cheese;
- 2 eggs;
- 2 tablespoons flour;
- 1 tablespoon mayonnaise;
- any greens for decoration.
Preparation
Cut the tomatoes into 1/2-inch slices. Grate the cheese, mix it with mayonnaise, flour and eggs. Dip each tomato circle in this batter and put in a frying pan with heated oil. Chop greens and decorate the dish
6. Crispy chicken fingers
Cooking time: 20 minutes
Ingredients
- 2 chicken fillets;
- 1 cup bread crumbs
- 0.5 cups of kefir;
- 2 cloves of garlic;
- salt, spices - to taste;
- vegetable oil.
Preparation
Beat the chicken fillet with the flat side of a knife and cut into 2–3 centimeters thick cubes. Combine bread crumbs, salt and spices. Crush the garlic and mix with kefir in a separate bowl. Dip each fillet block first in kefir, and then roll in breading. Fry until golden brown. Serve with any sauces and vegetables.
7. Chicken fillet with pineapple and broccoli
Cooking time: 20 minutes
Ingredients
- 2 chicken breast fillets;
- 3-4 slices of canned pineapple;
- 400 g broccoli;
- vegetable oil;
- salt, black pepper to taste.
Preparation
If you don't have canned pineapple on hand, you can use an orange or sweet and sour sauce. Cut the fillets into cubes and fry in a greased skillet for 7-10 minutes. At this time, cut the pineapples into cubes and sort the broccoli into florets. Add all the ingredients to the fillets and cook for another 5-7 minutes. If the dish does not seem satisfying enough, in addition, you can quickly cook spaghetti.
8. Chicken salad with celery
Cooking time: 25 minutes
Ingredients
- 2 chicken fillets;
- 2-3 large apples;
- 1 stalk of celery
- a handful of peeled walnuts;
- a handful of raisins;
- 2 tablespoons of mayonnaise;
- 2 tablespoons sour cream;
- 1 lemon;
- salt, black pepper - to taste;
- vegetable oil for frying.
Preparation
Cut the chicken fillet into cubes and fry in oil for 10-15 minutes. Chop the celery finely. Prepare the sauce: squeeze lemon juice and add sour cream and mayonnaise to it. Season with salt and pepper, mix thoroughly. Mix the finished fillet with raisins, celery and dressing.
Carefully remove the core from the apples and cut them into half a centimeter thick circles. Gently place the salad on top of them. You can simply cut the apples into cubes and mix with the rest of the ingredients. Chop the walnuts and sprinkle them over the salad.
9. Pasta with tomatoes
Cooking time: 10-15 minutes
Ingredients
- 400 g pasta;
- 3-4 large tomatoes (you can replace cherry);
- 2 bell peppers;
- 3 tablespoons sour cream;
- 3 cloves of garlic;
- a bunch of basil;
- a bunch of parsley;
- salt, spices - to taste;
- vegetable oil for frying.
Preparation
Boil the pasta until aldente, following the recipe on the package. While it's cooking, chop the peppers and tomatoes. Sauté everything in oil until the vegetables are tender. Rub the garlic at this time.
Add sour cream, salt, pepper, garlic and any spices. While the sour cream is dissipating, chop the herbs. Add it to the pan with vegetables and stir. After a minute, add the pasta to the pan and turn off the heat. Stir again - and you can serve.
10. Tuna and Bean Salad
Cooking time: 5 minutes
Ingredients
- 1 can of canned tuna
- 1 can of canned beans;
- 2 pickles;
- 1 fresh cucumber;
- 1 small onion;
- 1 tablespoon vinegar
- salt - optional;
- vegetable oil for dressing.
Preparation
Dilute the vinegar with water in the proportions indicated on the package. Chop the onion and marinate it in diluted vinegar. Mash the tuna with a fork, add the beans to it, after draining the sauce. Slice the cucumbers. Remove the onion from the vinegar and add to the salad. Fill with oil. Salt to taste: the dish may already have enough salt from tuna and cucumbers.
11. Prunes with walnuts in sour cream sauce
Cooking time: 10 minutes
Ingredients
- 300 g pitted prunes;
- 1 cup shelled walnuts
- 200 g sour cream;
- 3 tablespoons of sugar;
- vanillin on the tip of a knife.
Preparation
Soak prunes in hot water. At this time, whisk the sour cream with sugar and vanilla. Drain the prunes and place them on a towel. While it dries, break open the large walnuts.
It remains only to fill each prune with a piece of nut, arrange on plates and pour over sour cream. Don't let this process scare you: the dessert is very satisfying, and 5–6 pieces are enough for one serving. If you have time, you can decorate the dish with grated chocolate or crumble the nuts.
12. Bananas in chocolate with peanuts
Cooking time: 10 minutes
Ingredients
- 6 bananas;
- 1 bar of dark chocolate;
- a handful of peanuts (or crumbled cookies);
- lemon or lime juice;
- vegetable oil for frying.
Preparation
Melt the chocolate in a water bath or microwave. Finely chop the peanuts and fry a little in a pan with the addition of oil. Roasted and salted nuts are fine too; you just need to pour them into a sieve and actively shake off excess salt.
Peel the bananas and rub them with lemon juice to keep them from darkening longer. Dip each fruit or half in chocolate and then in peanuts or biscuits. Place on plates.
13. Oranges baked with honey and nuts
Cooking time: 20 minutes
Ingredients
- 2 oranges;
- 4 tablespoons of honey;
- 1 teaspoon cinnamon
- a handful of shelled walnuts.
Preparation
Immediately turn on the oven at 200 degrees. While it is heating, peel the oranges. Cut them into circles or divide them into wedges. If there are bones, carefully remove them. Chop nuts finely, mix with honey and cinnamon. Place the oranges in a mold and pour over the resulting mixture. Bake for 10-15 minutes.
