Combined with spices and sauces, noodles turn from an ordinary dish into an exotic one. All ingredients are easy to find in large supermarkets, and cooking time does not exceed 15 minutes.
1. Dan Dan noodles
Ingredients
- 3 cloves of garlic;
- 100 g roasted peanuts;
- 5 tablespoons of peanut butter
- 2 tablespoons white wine vinegar
- 100 g fresh spinach;
- 400 g wheat noodles;
- 3 tablespoons of soy sauce
- 1 teaspoon sugar
- ½ teaspoon Sichuan peppercorns;
- 4 green onion feathers.
Preparation
Chop the garlic, chop the onion. Crush the pepper in a mortar as fine as possible. Remove the stems from the spinach. If the leaves are large, chop them up.
Put peanuts, garlic, white onion, ground pepper, sugar, soy sauce, vinegar and oil in a blender or food processor. Stir until smooth. If the sauce is too thick, add a tablespoon of hot water.
Cook the noodles in salted water, discard in a colander and arrange on plates. Add spinach or watercress leaves and stir. Pour the prepared sauce over the noodles, sprinkle with green onions, peanuts and pepper.
2. Cold noodles with peanuts and sesame seeds
Ingredients
- 340 g egg noodles;
- a small piece of ginger, peeled;
- 1 clove of garlic;
- 2 carrots;
- salt;
- ¾ glasses of strongly brewed green tea;
- ⅓ cups of peanut butter;
- ¼ a glass of soy sauce;
- ¼ cups of rice vinegar;
- 3 tablespoons light brown sugar
- ¼ glasses of peanut butter;
- 2 tablespoons toasted sesame seeds
- 1 teaspoon hot chili sauce
- 1 teaspoon dark sesame oil
Preparation
Boil the noodles in salted water and drain in a colander.
Make the sauce: In a blender, combine green tea, peanut butter, soy sauce, vinegar, sugar, and peanut butter. Add sesame seeds, chili sauce, sesame oil, ginger, garlic and a pinch of salt. Blend everything in a blender until smooth.
In a large bowl, combine the noodles with peanut sauce and finely grated carrots. Cool it down. Sprinkle with peanuts and sesame seeds.
3. Rice noodles with tofu and vegetables
Ingredients
- 100 g of rice noodles;
- 2 cloves of garlic;
- 1 chili pepper;
- 2 tablespoons of vegetable oil;
- 1 zucchini;
- 100 g tofu;
- 1 carrot;
- ginger root - to taste;
- soy sauce to taste.
Preparation
Boil the noodles in salted water and drain in a colander.
In a wok (or shallow saucepan), heat the oil and sauté the chili peppers, chopped garlic, and grated ginger root.
Cut zucchini and carrots into thin strips. Add the carrots to the wok, stir the mixture and cook over medium heat for about five minutes. Then add the zucchini and cook for about three more minutes.
Place the noodles and diced tofu in the wok, add the soy sauce and stir. Simmer for another three minutes.
