Ingredients:
- 1½ cups (90 g) coconut
- 1 egg;
- 250 g low-fat cottage cheese;
- 3-4 tablespoons of honey (or other sweetener to taste).
Preparation
Start by preparing the curd. Give preference to a product that is not too dry and fine-grained. If there is a lot of whey in the curd, squeeze it out in a colander or cheesecloth.
Combine cottage cheese, egg and honey together. The main thing here is to make the mass as homogeneous as possible, more reminiscent of cream cheese in consistency. A powerful stationary blender or a small submersible blender can easily cope with this task.
Add the coconut flakes and stir. The mass should stick well together, but not dry.
Divide the mixture into nine servings and shape each cookie by flattening and rounding the mass on the parchment slightly with wet hands.
Leave the cookies in the oven at 200 degrees for 15-20 minutes or until they have a distinct golden hue on top. A minute and a half in convection mode will help make the delicacy even more crispy on the outside.
Chill the finished cookies. Now you can remove from the baking sheet and start tasting.
