Cake "Prague" is a favorite dessert of many. Cooking it is not as difficult as it might seem, but the result is excellent.
1. Making cakes
Ingredients
- 1½ cups flour;
- 1 cup of sugar;
- 2 eggs;
- ½ cans of condensed milk;
- 200 g sour cream;
- 1 bag of baking powder;
- 3-4 tablespoons of cocoa.
Preparation
Combine all dry ingredients except sugar. In a separate bowl, whisk the whites and sugar, add the yolk and other liquid ingredients. Pour dry ingredients little by little into the liquid bowl and mix well. Pour the mixture into a baking dish. Send it to an oven preheated to 200 degrees for 30-40 minutes. To check if the cake is ready, pierce it with a toothpick. If there is no dough on the toothpick, it's time to take out the cake.
When the dough has risen and baked, remove it from the oven and leave to cool for 30 minutes. Then remove the dough from the mold and cut into two or three cakes.
2. We make impregnation
The cut cakes need to be soaked properly. The impregnation will enhance the cocoa flavor and make the cake softer and more tender.
Ingredients
- 150 ml of water;
- 50 ml of rum or any other alcohol;
- 5 teaspoons of sugar.
Preparation
Alcohol can be replaced with essence or add another 50 ml of water instead. Impregnation is very simple. Heat the water in the microwave, mix with alcohol and sugar, and pour over the cakes generously. If you don't have enough, you can always do more while maintaining the proportions.
3. Preparing the cream
While the cakes are cooling, prepare the cream. It is quite bold, but in Prague it is appropriate thanks to the cocoa.
Ingredients
- 200 g butter;
- ½ cans of condensed milk;
- cocoa to taste.
Preparation
Let the oil sit warm for 30 minutes to soften. If you want to speed up the process, cut it into cubes. Combine all ingredients with a fork or mixer. The cream is ready. Apply it from the center of the crust, gradually working towards the edges. Then put the cakes on top of each other, and smear all the irregularities with the rest of the cream. The cake can be served this way, but if you want something festive, add the icing.
4. Making the icing
Ingredients
- 3 tablespoons of cocoa;
- 3 tablespoons of milk;
- ½ cup sugar;
- 30 g butter.
Preparation
Combine sugar, milk and cocoa in a saucepan and cook until bubbles appear. Once the liquid has cooled slightly, add the oil. The glaze can be made softer if you beat it with a mixer.
Slowly, starting from the center, pour the resulting frosting onto the cake. If you see that somewhere there is not enough glaze, distribute it with a knife or spoon.
The finished cake can be sprinkled with powdered sugar, decorated with candied fruits or nuts. In many classic recipes, the cake is coated with a thin layer of orange or apricot jam, and only then the icing is applied. This makes it shinier and smoother and adds an interesting flavor.
