1. Pickled onions with wine vinegar
Ingredients
- 1 onion;
- 300 ml red wine vinegar.
Preparation
Cut the onion into rings or half rings. Place in a deep bowl. Pour the vinegar over so that all the pieces are covered.
Leave for 15 minutes at room temperature, stir occasionally. For a richer flavor, let the onion steep for an hour.
2. Pickled onions with vinegar, salt and sugar
Ingredients
- 1 onion;
- 120 ml table vinegar 5%;

Preparation
Boil water. Pour it over the onion in a bowl and cool. Then drain the liquid and peel the vegetables. Cover them with salt, vinegar and honey. Transfer everything to a jar and refrigerate for 8-10 hours.

Ingredients
- 1 onion;
- 3 cloves of garlic;
- 1 tablespoon salt
- 1 teaspoon black peppercorns;
- 1 teaspoon oregano
- 1 teaspoon of cumin;
- 350 ml of wine vinegar.
Preparation
Cut the onion into thin rings or half rings. Garlic - halved.
In a bowl, combine the onion and salt and let sit for 15 minutes. Then transfer to a jar, add spices and garlic, pour vinegar. Close the lid and refrigerate for 4 hours.

- 1 pinch of salt;

- 2 teaspoons of sumach.
Preparation
Cut the onion into thin half rings.
Pour in lemon juice, salt and stir. Leave for 20 minutes, stir occasionally.
Sprinkle with coarsely chopped cilantro and sumac before serving.
6. Pickled onions with hot peppers
Ingredients
- 2 onions;
- 6 cloves of garlic;
- 2-3 hot peppers, such as jalapenos;
- 1 sprig of cilantro;
- 350 ml of water;
- 700 ml of table vinegar 5%;
- 200 g of sugar.
Preparation
Cut the onion and garlic into medium pieces, hot peppers into rings. Chop the cilantro coarsely.
In a small saucepan, heat the water with the vinegar and sugar. Simmer over medium heat until the granulated sugar is completely dissolved. Then remove from heat, cool and add garlic.
Place the onion in a deep bowl or jar. Add pepper and cilantro, stir. Pour the marinade over and leave in the refrigerator for at least 4-5 hours.

7. Pickled onions with garlic, cloves and ginger
Ingredients
- 1 piece of ginger (about 2-3 cm);
- 620 ml of water;
- 350 g small onions;
- 350 ml white wine vinegar;
- 6 cloves of garlic;
- 5 allspice peas;
- 1 tablespoon sugar
- 1 bay leaf;
- 2-3 things of a carnation;
- 1 small hot pepper, such as chili (can be substituted with 1 pinch of hot red pepper)
- 1 pinch of salt.
Preparation
Cut the ginger into small pieces.
Boil 500 ml of water in a saucepan. Add the onion and simmer for 3-4 minutes. Then take out the vegetables, rinse under running water, cool and peel.
Combine ginger, 120 ml water, vinegar, garlic, allspice, sugar, bay leaf, cloves, chili, salt and bring to a boil. Then reduce heat to medium and simmer for 5 minutes.
Put the onion in a jar, cover with marinade and cool to room temperature. Close the lid and refrigerate for 4-5 days.

8. Pickled onions with soy sauce
Ingredients
- 2-3 onions;
- 1 green chili
- 1 red chili
- 1 lemon;
- 240 ml of water;
- 480 ml soy sauce;
- 200 g sugar;
- 240 ml of apple cider vinegar.
Preparation
Cut the onion into large pieces. Pepper - in small circles. Squeeze the juice out of the lemon.
In a saucepan, combine water, soy sauce, sugar, and vinegar. Bring to a boil and simmer over medium heat for 5-6 minutes. Mix with lemon juice.
Put the pepper and onion in a jar. Pour marinade over and cool at room temperature. Then cover and refrigerate for 1-2 days.
