1. Hungarian goulash
In our latitudes, goulash is often called meat stewed in tomato sauce with paprika. In the original Hungarian recipe, goulash is a soup. But thick and flavorful like a sauce.
Ingredients
- 500 g beef shoulder;
- 2 bell peppers;
- 2 tomatoes;
- 3 potato tubers;
- 1 onion;
- 2 cloves of garlic;
- 1 teaspoon tomato paste
- 1 tablespoon dry paprika;
- 1 teaspoon lard;
- salt, pepper, cumin.
Preparation
- Wash the meat, dry it, cut into large cubes.
- Extract seeds from bell pepper, cut into small cubes.
- Dice the tomatoes and potatoes.
- Chop the onion and garlic.
- Melt lard in a saucepan, add onion and garlic, sprinkle with paprika.
- Fry the meat in a pan with a little lard or vegetable oil.
- Transfer the meat to a saucepan, add water so that it covers all the pieces, add salt, pepper, cumin. Simmer for an hour and a half, adding water if necessary.
- Add potatoes, tomatoes and bell peppers. Fill with water so that it covers the entire contents. Cook for 15 minutes (until the potatoes are ready).
- Let the soup steep for 10 minutes.
2. Pea soup with smoked ribs
Hearty cream soup with bright flavor combinations. Mom's old dish, cooked in a new way.
Ingredients
- 1 cup dry crushed peas;
- 500 g smoked pork ribs;
- 2 potato tubers;
- 2 carrots;
- 1 onion;
- 1 tablespoon vegetable oil;
- white bread croutons;
- salt pepper.
Preparation
- Rinse the peas and soak for three hours.
- Cut into cubes onions, carrots, potatoes. Fry vegetables and ribs in vegetable oil. The vegetables should turn golden brown, and a crust should appear on the ribs.
- Add soaked peas and fried vegetables with ribs to a pot of water. Season with salt and pepper.
- Boil the soup until the potatoes are cooked.
- Extract the ribs.
- Beat the soup with a blender.
- Add ribs, garnish with croutons.
3. Spicy kharcho
Soup from childhood, from the lunchtime schedules of the canteen of the Crimean resort. It is unfair to leave this spicy rich soup in the memories of youth.
Ingredients
- 400 g of beef;
- 4 tablespoons of rice;
- 2 onions;
- 1 carrot;
- 1 head of garlic;
- 50 g of tkemali sauce;
- ½ cup walnuts;
- ½ cayenne pepper;
- greens for decoration.
Preparation
- Cut the beef into large pieces and cook for an hour and a half.
- Add tkemali sauce to the broth.
- Chop carrots and onions, add to soup, cook for 30 minutes.
- Add rice, cook for 10 minutes.
- Grind the nuts in a mortar and add to the soup along with chopped garlic and finely chopped cayenne pepper. Cook for another 15 minutes.
- Decorate the finished dish with a sprig of herbs before serving.
4. Broth with meatballs
A light soup perfect for those days when it's raining outside. Add carrot circles and letter-shaped noodles, and bad weather doesn't interfere with your good mood.
Ingredients
- 500 g chicken fillet;
- 1 carrot;
- 1 onion;
- green onions;
- 1 clove of garlic;
- 3 black peppercorns;
- 1 bay leaf;
- greens for decoration.
Preparation
- Scroll chicken fillet, half onion and garlic through a meat grinder, mix with finely chopped green onions.
- Blind meatballs about the size of a small apricot.
- In a saucepan of water, put the second half of onions, carrots, cut into slices, bay leaves and peppercorns.
- After boiling, dip the meatballs into the water. Reduce heat to low.
- Cook for 40 minutes.
- Decorate the finished dish with herbs.
5. Soup of three types of mushrooms
It would be unfair to forget about mushroom soup.
Ingredients
- 100 g of porcini mushrooms;
- 100 g honey agarics;
- 100 g of champignons;
- 2 potato tubers;
- 1 onion;
- 1 carrot;
- 2 tablespoons of vegetable oil;
- greens.
Preparation
- Cut the champignons and porcini mushrooms into cubes. Then, together with the whole honey mushrooms, fry in a pan until the first juice appears.
- Dip the mushrooms in a pot of water, cook for 15 minutes.
- Add coarsely chopped potatoes and carrots, cook for 15 minutes.
- Fry the onions, add 5 minutes before serving. Sprinkle the finished dish with herbs.
6. Spicy pumpkin soup
In autumn recipes, pumpkin is difficult to do without. We suggest you prepare a warming, rich soup.
Ingredients
- 1.5 kg pumpkin;
- 2 onions;
- 30 g butter;
- 200 ml cream, 15% fat;
- 500 ml of vegetable broth;
- 2 teaspoons curry
- 1 teaspoon of cumin
- 60 g fresh ginger;
- 1 tablespoon sugar
- salt pepper;
- pumpkin seeds for decoration.
Preparation
- Cut pumpkin in half, remove seeds, brush with oil. Put in the oven, cut down, bake at 180 degrees for 40 minutes.
- Scrape the pulp with a spoon, add it to the pan with vegetable broth. Add spices and grated ginger there.
- Fry the onion in butter until transparent, add it to the broth.
- Season the soup with salt, pepper and cook for 15 minutes after boiling.
- Add cream and sugar, beat with a blender.
- Garnish with pumpkin seeds when serving.
