Preparation

Place the butter in a saucepan and melt over medium heat. Add the peeled and finely chopped onion. Cook it, stirring frequently, until tender. Then add the broth, carrots and ginger. Cover the pot with a lid, bring to a boil, reduce heat, and simmer until the carrots are tender.

Remove the dish from the heat, let it cool for five minutes, transfer the portion to a blender and chop until smooth. Do the same for the whole dish.

Observe the following guidelines when handling hot soup:

  • fill no more than half of the blender;
  • leave the lid ajar on one side to avoid thermal explosion;
  • cover the blender with a towel before mixing.

Transfer the cream soup back to the saucepan, put it on high heat and add the cream. While stirring the soup, bring it to a boil, season with salt and pepper and remove from heat. Serve with sour cream.

  • 220 g shiitake mushrooms;
  • 3 green onion feathers;
  • 450 g udon noodles.

Preparation

Combine meat, broth, water, soy sauce, ginger, star anise, chopped onion, and minced garlic in a saucepan. Place the pot over low heat, cover and cook until the meat is tender (this process can take several hours). Then take out the meat, let it cool slightly and divide into large pieces.

Strain the broth and return it to the fire. Add meat, chopped mushrooms and green onions. Simmer for 15 minutes, until mushrooms soften.

Simultaneously boil the noodles in salted water until al dente. Then drain the water and add the noodles to the soup.

Preparation

Prepare the pork tenderloin first. To do this, you will need a frying pan that can be used for both oven and stove-top frying.

Heat oil in a skillet, add pork, season with salt and pepper and cook over high heat until golden brown (about three minutes on each side).

Then move the skillet to an oven preheated to 180-200 degrees and cook the pork for 18-20 minutes. Turn the piece twice while cooking. If you have a kitchen thermometer, then the signal that the tenderloin is ready will be a reading of 60 degrees in the thickest part of the piece.

Transfer the pork to a wooden board and let it rest for 10 minutes. Prepare the sauce at this time.

In the same skillet where the tenderloin was cooked, combine the apple juice, broth, soy sauce, raisins and ginger and bring to a boil. Cook for about four minutes, until the liquid has evaporated by half.

Then dissolve the starch in a teaspoon of water and add it to the sauce. Continue cooking until it is thick enough (30-60 seconds).

Remove the pan from heat. Divide the pork into bowls and top with hot sauce.

Place the chicken in an ovenproof dish. Scatter chopped onions and peppers, ginger slices and lime quarters nearby. Add half a glass of water and send the mold to the oven, preheated to 220 degrees.

Cook for about 30 minutes, then use the tongs to turn the chicken breast-side down and cook for another 20 minutes, until the skin is lightly browned. Then turn the chicken over again, add another half cup of water, and continue baking for 20 minutes.

Remove the chicken from the oven and tilt it over a clean saucepan so that all the fat can drain inward. Place a saucepan over high heat, pour the broth into it and bring it to a boil. Add fish sauce to broth and stir. Strain the broth if necessary.

Serve the chicken and stock sauce in separate dishes. It is better to dip the pieces of meat in the sauce.

Preheat oven to 180 degrees. Using a tablespoon, spread the dough on a parchment-lined baking sheet. To prevent the cookies from sticking together, leave gaps of 9-10 centimeters between the pieces. Bake for 20 minutes, then remove and cool. Prepare the whole dough in the same way.

While the cookies are baking, prepare the filling. Whisk the butter and sugar until light and airy on medium speed. Then add lemon juice and beat the cream again until smooth.
