You've probably heard that eating slowly helps prevent overeating. It turns out that if you eat slowly, you get more pleasure from the taste of the dish.
The thing is, our language is a little awkward. It perfectly defines six basic tastes: sweet, salty, sour, bitter, umami and, according to recent reports, the taste of fat. However, according to research published in October this year, more complex flavor combinations can only be caught with the nose, and without inhaling the aroma.
It is important to eat and breathe slowly through your nose during this time. When you breathe through your nose, the flow of air creates a “wall” between your mouth and throat, preventing volatiles from entering your lungs. When you exhale, air travels from the back of your mouth to your nose and carries these volatiles there.
If you throw food into the firebox too quickly, you violate this model and do not fully perceive the variety of flavor nuances. It probably doesn't really matter if you're eating a hamburger, but when you're enjoying a gourmet masterpiece with a complex range of flavors, slow down, breathe and savor!
