Broccoli and spinach cutlets are a simple and healthy dish for those who want to add variety to their menu. They will be even tastier in the company of a light yogurt sauce with mint and lemon zest.
Ingredients
For cutlets:
- 400 g fresh spinach;
- ½ a head of medium broccoli;
- 3 eggs;
- 1 cup bread crumbs
- ¼ glasses of wheat flour;
- ½ teaspoon dried garlic;
- salt, pepper - to taste.
For the sauce:
- 1/2 cup thick yogurt or low-fat sour cream
- 1 teaspoon lemon zest
- 2 teaspoons chopped mint leaves
- salt, pepper - to taste.
Preparation
If you don't have a blender, slicing broccoli and spinach is the most troublesome step.
Separate the fresh-stemmed broccoli florets from the stalk and try to chop as much as possible. Chop fresh spinach leaves finely.
Combine vegetables with the rest of the cutlet ingredients and blend until a paste is obtained. Knead the mixture with your hands to make sure there are no large pieces left in it.
Form 10-12 cutlets into equal sizes and dip each in a little lightly salted flour.
Fry the patties in a little vegetable oil over medium heat for 2-3 minutes on each side.
When the patties are ready, combine all the ingredients for the lemon-mint sauce and serve with the finished meal.
Healthy green patties can be refrigerated for up to 5 days.
