  • 1 stalk of leeks along with herbs;
  • 2-3 tomatoes or 1-2 tablespoons of tomato paste;
  • 1 bell pepper;
  • a few of any fresh or dried mushrooms.

Add other vegetables that you can find in the kitchen, if desired. Sometimes broth is even boiled from unnecessary scraps of vegetables or added to other products.

How to cook vegetable broth

Rinse vegetables and herbs well. Onions and garlic can be used with the skin, while carrots can be rubbed thoroughly with a brush.

Cut vegetables into large chunks. Greens can also be coarsely chopped or left intact.

If you add fresh mushrooms to the broth, cut them into large pieces too. Dried mushrooms must be soaked in hot water for 20-30 minutes.

Put all prepared ingredients in a saucepan, add salt, pepper and lavrushka and cover with water. She must completely cover them. The less water, the more concentrated the broth will be.

Bring the liquid to the first bubbles over medium heat. Then reduce it and cook for 1-2 hours.

How to store vegetable broth

If you don't plan to use it right away, pour the cooled broth into a jar or container with a lid and refrigerate. There it should be stored for no longer than 1 week.

The broth can also be frozen in a suitable container. It can be stored in the freezer for up to 3 months.
